Wouldn't the shark just be passive until you you either get too close or attack it?
For a while i thought we'd never get more than squid in the water due to some kind of tech limitation and they are saying a bunch of stuff that makes no sense. I punch wolves in the face in this game but I'm not going to go punch a real wolf in the face EVER in real life.
These excuses are so bad it kind of feels like a cover up for something else.
After investigating her activity on Twitter, her behavior is... Apalling. I'm surprised Jeb and Nathan is letting this slide. (Then again I probably shouldn't be) It makes me wonder how Markus feels about this.
Putting the message "Don't kill endangered sharks" in the game might not just be considered annoying to people who live in areas where this message won't phase them a bit, but might even just be considered offensive to the people who's lives might depend on killing endangered animals. Now, at least Mojang isn't blatantly adding in a feature that is telling people not to do this, but if this mentality continues, it might very well lead to it.

2 Shark Fins are only used in Terraria to make potions and the Megashark. The shell is now a drop by a Solar Eclipse enemy.
Dolphins could be used to retrieve items from the water, as some sort of semi-automatic fishing rod. They could also be sea wolves of sorts... Be a bit creative, rather than assuming that dolphins NEED to be rideable or have an unique drop in order to be useful. After all, cats, parrots, and wolves are useful, but do neither.
Honestly, it's not that we care for rideable dolphins (well, at least I don't).
It's the bad reasoning that angers us.
As well as this, tamed dolphins lead you to treasure found in shipwrecks. They already made a use for it.
Finally, how are parrots useful? All they do is sit on your shoulder, mimic sounds, and dance to music boxes.

That depends on what platform you're playing on. Shark fins are used for even more if you're using mods like Calamity.
And why do sharks HAVE to be a common waterborne hostile mob? There's more original options, such as jellyfish, dolphins (After all, dolphins are among the few animals that kill for fun, and it would be easy to make them hostile dolphins look like they're from a separate species), stingrays (Specially if Mojang want to make griefing swimming pools more fun), sea snakes, electric eels, moray eels, coelacanths, crustaceans of unusual size... There's a lot of options, even if only RL animals are considered (Specially as the game already has comparatively obscure flowers and Ocelots, which are pretty rare in fiction, which means that obscure animals can be used as well), to the point that using sharks as a hostile water mob would feel almost painfully uninspired (Specially coming from a game where ocelots can scare away human-sized walking exploding shrubs, there's flying fireball-shooting jellyfish, and there's an entire mushroom-themed biome).
You're right, sharks aren't the only option for a hostile sea creature. However, they would be an excellent choice because:
1. You would expect there to be sharks in the ocean.
2. They can be at the bottom of the ocean or near the surface.
3. Everyone's familiar with them.

The "reasoning" was most likely a sarcastic response. They most likely won't be rideable, but not due to some weird concerns.

To be fair, though, I've stopped expecting anything good from them, so why bother?
Personally I am dissatisfied with Mojang's reply. I do a lot of violent and deplorable things in video games that I would never do in real life. I play Call of Duty almost daily, but I've shot exactly 0 people. I played Jaws on the NES as a kid, but I've speared 0 sharks. I love GTA but I've stollen 0 cars and done deplorable things with 0 hookers.
I don't think pointing to the mania created by the original Jaws movies as an example of why there can't be sharks in Minecraft holds water. It's two different scenarios that take place in radically different media cultures, spanning almost a half century! If they don't want sharks, hey, it's their game and they can program what they want. My issue is with the specious reasoning in the given excuse. If that is really what is standing between us and shark infested waters, then it's ridiculous and needs to be addressed publicly.

Some people now use the polar bear as an example but you got to keep in mind that Minecraft is played worldwide. And generally speaking the chances of running into a shark in the wild are larger than running into a polar bear. Quite frankly I think there's nothing wrong with keeping some things a bit smoothened out. Same with the parrots... "Polly wanna cracker" is a myth and although they at first used this in the game they later realized that it might not be a good idea because of real life and therefor changed it.
People now talk about politically correctness but I don't see that here to be honest. I perceive this as an attempt at keeping the game fun and fully appropriate for the widest target audience possible.
And speaking of politically correctness... If that would be involved here then I think you shouldn't put the blame on Mojang but their target audience instead. Those are most likely the people who push Mojang into certain decisions. Take the EULA; according to Mojang the fundamental reason to put it into effect was because parents ended up confusing servers for official Mojang servers (whether this is true or not is something I can't say). Take the parrots: it was only after other "3rd parties" informed Mojang about the risk of killing a parrot by feeding it chocolate that they decided to change the concept from cookies into seeds.
So I think Mojang isn't necessarily to blame here. At most I think it's the people who keep whining to Mojang about certain "inappropriate" gameplay elements.
Right. I think we're all forgetting that Minecraft is supposed to be as close to real-life as possible. Let's all make sure that we:
-Punch trees. There's absolutely no downside to smacking our knuckles repeatedly into hard objects!
-Approach wild animals in attempts to domesticate them in a single generation, and with no training whatsoever!
-Carry around literal tons of rocks. It'll help build muscle!
-Use open-flame torches to light wooden structures!
-Jump and place objects beneath our feet in order to build tall stacks of blocks!
-Go swimming in lava if we have nothing of importance and just want to return to our bed quickly!
Seriously, if that rambling incoherence honestly came from a Mojang employee, then my respect for the company just dropped considerably. Would it really have been so difficult to just say, "We have other priorities at this time," rather than making up that nonsense?

Easy enough...
1. Add Sharks
2. Have sharks in water chunks attack (wooden) boats
3. Have sharks in deep water attack players in survival mode (Low air should kill the player 1st)
4. Dolphins are known to protect humans from sharks, so why not have Dolphins protect the player and Villagers in shallow water
Shallow water being more than river depth but less than deep water (could be sunlight penetration controlled)
Additionally it could require a minimum of a 3x3 or 5x5 square of water for sharks to spawn preventing them in 1 block wide waterfalls.
Right, because every time I go into the water I get killed by a guardian.
Guardians aren't common; they only spawn in a rare temple. There should be some sort of common water danger.
