To me, "adding too much" only applies if it's stuff I'm forced to deal with. Like, if they added a couple more stats to keep track of besides hunger, health, and defense.
Just adding items doesn't bother me, because maybe I'll never craft or find the items?
Adding more mobs doesn't bother me, but increasing the number of mobs that spawn immediately around me might. Like, if mob spawners spawned 10-40 mobs instead of 1-4.

in my opinion they are adding a reasonable amount of things, i hated the combat update but now is meh, the observers were a nice thing, the terracotas and glazed terracota are blocks i will nerver use, the concrete are good(maybe a whitish white concrete will be better) to build, the new beds are good(but i want more colors to the beds like a black sheet with a red pillow and dark oak bed base) the woodland mansion was a really needed dungeon to the overworld, they stil need add things but for now they are good but the new textures are UGLY
Everyone has actual reasons for their opinions. Feelings are spawned from objective reality. Figure out what exactly caused your feelings to be that way, and why those things affected you so, and then perhaps you may have a point.

While it will harmonise the textures into one style it breaks the iconic style that was before it and I don't want to play a game that looks different to everyone else's especially if I want to make something that other people want to use.
People will always have a worse reaction to changes in the game and additions will be more mixed reaction. Changing textures is just that, a change it doesn't add anything new to the game and implies something is taken away in exchange. You could always install a texture pack for the purpose that this fills (They knew the textures where quite bad) and is just asking for people to get upset.
Mojang has to add new updates to minecraft for two reasons, 1 it keeps people interested and 2 it sells better that way. They want to make money and adding new things is the way to do it. As someone who is constantly switching between 1.7.10 and 1.12 I fully understand why people think mojang is adding too much, Some things I like some things I don't...
If the new textures really bother you so much there will always be resource packs available from older versions.
As for the combat update, most big networks and servers tend to still use the original form of combat while still being compatible with newer versions.

I think that every update that has come out so far made it better. The combat update? I love it, for two reasons. Number one, it is much more realistic. How in the world, do you explain, just stabbing someone with a sword 20 times a second? Nonsense! And number two, it is much easier to PVP, and for once, it doesn't matter who has a better auto-clicker or more finger muscle. One thing that I don't like however, is that I think the updates are coming out too fast. I would like some time to enjoy 1.12, before 1.13 comes out. I am playing a lot of survival, and if 1.13 just comes out, all of a sudden my 1.12 world is dead.
One thing you could do now to prep for that is to create a new profile that is not set to use the latest version, but to historic versions, and set it to 1.12. Never open your current world unless you know you are in that profile.

They are being told "Add stuff, but don't change anything! And if you don't add stuff, it means Microsoft is abandoning the game! But if you do add stuff, it means the game is getting bloated!"
First of all, I know how to change the version. The thing is, it's not fun playing Minecraft 1.12, when 1.13 will be out, since it will be more advanced and will have more features.
I don't understand why you would think playing one version of the game wouldn't be fun if there's another version coming out. There's always another version coming out, eventually. It's pointless to worry so much about the future that you can't enjoy the present.
Especially since, other than the texture changes, 1.13 is focused on "behind the scenes" changes that won't affect players directly, aside from better performance. It's mostly going to affect map makers, because of both changes to command syntax and added features like custom crafting. The only way it could affect your current worlds is if converting between versions will cause glitches or corruption that ruins your worlds. In which case, if you know about changing the version, or at least make a backup of your current world before testing in the new version, there's nothing to worry about. You can make plans to play out your 1.12 world all the way to the end, regardless of what happens with the rest of the game.
(1) Minecraft is the last game to be bloated! Minecraft is doing great, and is definitely not bloated. If you think it is bloated, then it is your problem, and you should go play another game. There are billions of players who enjoy Minecraft the way it is, so let it be. And hey, what do the ones who don't enjoy the 1.9 combat do? They play 1.8 PVP on 1.8 PVP server. In fact, I know only a few servers that use 1.9 PVP, so yeah.
I assume you are directing this towards the people I was half making fun of? I don't think it's bloated. I don't care about 1.8 PVP. But it's always stunned me when I run across the people demanding a return to 1.8 combat, because yeah, we all know it's easy to switch back to 1.8 if that's what you want, or to use mods to change combat back while still having access to other changes. And yet, when one of the developers posts on Twitter about an upcoming feature, it's very common to see someone reply with a complaint about the 1.9 combat.
This is why I say the developers are getting hounded. Some very vocal, very aggressive people are constantly hitting them with contradictory demands ("Add new stuff, but not too new, and change some stuff back, but keep things moving forward!") It must be very exasperating.

Prismarine and such = Good
Better boats = Yes!
More doors = Yes!
Combat update = Terrible, but I get used to it.
Concrete = Yes!
New wool textures = So much better than the old.
Glazed terracotta = Cool.
Recipe book = Annoying, useless.
Inventory updates = Fine I guess.
