Nothing added to Minecraft is necessary. Redstone wasn't necessary. Cows, Sheep & such weren't necessary. Biomes weren't necessary. Minecraft itself isn't necessary. The parrots are really good mob detection, (Specifically Creeper) Illusioners are gonna add some more challenge to the Mansions. Concrete is a great flat color block, and Advancements are completely customizable, and people on reddit have found ways to abuse them to make Commandblock-less Commandblock mods.
Maybe "unnecessary" was a wrong word to use. I just think that the game was pretty done previously. Everything they add to the game recently really look unnatural for me for some reason. That's the reason i don't play survival in the brand new updates, something always feel off. I personally think they're over complicating the game, i guess i prefer Minecraft to be more simple. But well, it's just my opinion.

You're not alone there as suggested by other posts, but I will mention that calling all of what you said "necessary" is not quite.
The new colored blocks are easy to craft and aren't flammable, and even give gravel a new use now. Something great for Survival, alongside the new parrots.
There is indeed a certain "magic" to the days of old. Granted, a large chunk of that is nostalgia. Yet, when I returned to 1.2 to test something, I felt something else. The mobs were more difficult, the terrain gen was much better, and animals spawned more, making hunting feasible, to start.
There has never been a better time for Creative mode players, and while 1.12 is a step in the right direction, Survival has a ways to go.
This is possibly the best update to minecraft ever.
It helps all types of builders by adding powdered concrete which can be used in landscapes and other cool stuff. It also adds normal concrete which can be used in futuristic and pixel art.
concrete powder can be used by redstoners and has cool survival based features. Still unsure if the updates to stairs and terracotta will help redstoners?
command blockers are having an absolute field day with all the new advancements and stuff.

The advancements feature has potential; it just needs some kinks worked out. Yesterday I was playing for a good half hour before it suddenly was nagging me about punching wood lol. It doesn't seem as straightforward as achievements, but maybe that's just because I need to get used to it.
I like everything I've seen of the coming update especially the dyable stuff, and the way they made the wool have a much better texture (I like red but I hate the pinkish color they have/had for the "red" wool). As I have mentioned in a previous (now locked) thread, I DO NOT like the weapon charge up and wish they would take it out but I've got the feeling it's here to stay (so much for my PVP/PVE career.)
It adds an unecessary mob, unecessary block, unecessary change to achievements...I don't really like this update, but i will never play it anyways, i got 1.7.10 and b1.7.3...
The only thing i like from this update, is surprisingly, the Terracota.
The only thing I didn't like at this update is the new bed image files in the entity folder. I prefer the old ones, where we could customize the whole bed in 6 different images and turn it into a box bed, instead of being locked to use and edit a 4 feet one.
The thing with the bed is that the devs had to add new colored beds (they promised), but because there was no space for additional 15 blocks (and the removal of the limit was pushed into 1.13), so they had to make the bed a block entity. And because it's now a entity - its model is no longer customizable. This should be changed back in 1.13, after they remove the limit.

That's awesome. I hope it really comes back - it's kinda nonsense for a bed to be an entity, at all.
I like the new beds as well, there was even such thing as the "Dyable Beds" mod for a while. In my opinion there are many mods that would be great additions to vanilla minecraft.
What happened to the ladders in Pre 4? They don't place correctly (Ladder goes on an adjacent block side not the one you select) and placing ladders next to each other will make them fall off.

Finally, we have coloured beds and that helps us to decorate our houses even more than before. The advancements are a little weird i guess, but now they are implementing new references and some from the original achievements. About the parrots... well... it's a new pet... but we could have added snakes or other jungle animals. BTW, i like it when the parrots simulate a mob's sound. It's so cute :3

Though, the game itself is unnescessary as all games are unnescessary, but unnescessary things are the spice of things wouldn't you aggree?
I mean, why add guns to DOOM when we could've just fight with a chainsaw?
Why add berries to Pac-man when we could've just eaten pelets and ghosts for points?
Why add spice to food when it's already edible?
Why go to school when we could study at home?
