I have always gotten my infinity bows through fishing but since the update I haven't fished any bows with the infinity enchantment. I have fished 11 enchanted bows with other enchantments though, has fishing infinity bows changed with the update?
According to this page (very useful if you want to know how likely an enchantment is or what you can get at a certain level) there is only a 6% chance of getting Infinity on a bow enchanted at level 30 (the same as an item obtained from fishing), which means that on average you have to enchant 16-17 bows. However, the chance of getting it after 17 bows is not 100%; the chance of not getting Infinity is 94% per attempt and for 17 attempts it is 0.94^17 = 35%, so you still have about a 1/3 chance of not getting it. For 11 bows the chance is about 50%.

On my first 1.11 world I did a LOT of fishing (1 and 1/2 double chests full of fish) and I have 7 Infinity Bows out of very close to 100 enchanted bows.
Counting the cursed ones but not the unenchanted ones.

Not on my current world, anyway - just fished up an infinity bow, and an infinty book (lure III/luck of the sea III on my rod).
