First of all, the snapshot had the Elder Guardian spawn egg. It also had zombie and skeleton horse. They even removed husk and stray. The only thing that Mojang didn't remove was polar bear. Now those mobs that are removed spawn naturally. You can't even spawn them with commands.

They are variants of other mobs, and were causing issues, so the spawn eggs were removed. Wiki states they may be brought back in 1.11
As for spawning them via commands, as I said, they are variants of other mobs, so you can't type /summon stray, or /summon husk. Instead...

I used some for the mob spawners and they don't keep the entity data.
I personally prefer to use the snapshots. (To fix this problem)
It appears the spawn eggs were removed because of buggyiness. However, google 'custom spawners', there is a lot of very straighforward guides that let you get a spawner for any mob, and more.

They should've kept the spawn eggs for the alternate mobs! That would've been really useful for not only random stuff, but also good for map makers who don't have much experience with command blocks.

How does this work for existing worlds? New entities auto-generate with the day/night cycles, so I assume I can expect to see polar bears in the right biomes of my existing world if I wander long enough, but what about new blocks and other stuff? Are they automatically inserted when loading an existing world, or do I need to create a new world in 1.10 to see them?

I wonder what's going on with 1.10.3, why is it taking so long? Secret feature?
Probably won't be a 1.10.3 as 1.10.2 seems pretty stable and features for 1.11 are being made (No details will be given out until Minecon, which is sometime September).
So in a way, yes, secret features, but not for 1.10 as the only reason to add another 1.10 version would be to fix a major bug.

I presonaly think 1.10 is a nice update. I think the structure blocks will have a massive positive impact on mapmaking.
i cant get the sound to work in 1.10 and ive used every fix on youtube anyone know how to fix this?

Maybe use them as a defense against mobs? include them as a lower part of a wall or create a moat with them?

The eggs had some bugs. The full list of them:
MC-102147 for all eggs
MC-102190 and MC-102164 for Cats
MC-102059, MC-102047 and MC-102046 are changes that had to be done because of the addition.
