To put simply the new system is you have the bow in your main hand(left or right) then in your off hand you hold the arrow, making the classic how you use a bow. The quiver just didnt make sense with the new offhand feature

The bow would be in the off hand while the string pulled with the main hand. The arrow has a rest on the bow (unless traditional where it rest on top of your finger) and is notched on the string; so it isn't held. If you ever used a quiver you'd realize that you can carry various arrows with heads for different hunting or shooting requirements such as blunts for small game, points for target, and broad-heads for larger game. The whole point of a quiver is to carry your arrows so they and you are protected. I never had a problem choosing my arrow based on the fletching on the shaft. They should ask these modders how to do it.

Right. Which makes you question their choice. What would be cool, is if (the off hand is required to be empty for this) that there would be an animation of the player pulling the arrow from the quiver and notching it on the bow. I just hope they don't get too realistic and add arm guards.

Where did anyone from Mojang say that bows are two handed? Source? The fact that you can equip arrows in your off-hand is basically proof that they AREN'T two handed... You know, because you have an arrow in your off-hand?
I haven't seen anything in this thread or the Wiki stating that bows will be two handed... The only thing I saw in regards to it was this tweet and picture.
By "weapons" I assume Dinnerbone means swords, and by "attack" I assume he means left click, which is true. Since the block function was removed from swords however, your main-hand does not have a right click function. This would default your right click to your off-hand. I assume you would still be able to draw a bow with right click while main-handing a sword, but would be unable to punch someone with it. Not exactly a big loss in the bows functionality.
That's a number of assumptions, but will probably be how it works unless it's reworked again before it's released /shrug.
I was confused in my thought that you can't "use" your main hand however. They just removed the "use"(block) from swords. Your main-hand "use" will override your off-hand.

It would be cool if the quiver was an item that could open an another inventory inside your main inventory. Inside of it you'd be able to keep, let's say... 15 (?) slots for arrows? It wouldn't be OP like a backpack but could still have an use besides the addition of a cool visual effect. Maybe quiver should be a rare loot and not craftable item?

They could incorporate a hot key or mouse scroll to change type of arrow to be shot. It wouldn't be OP since they could always reduce the amount of arrows per slot in the quiver so the max was still 64 if they wanted to. Either all one type or several depending on how you wanted to play. They could use the 2x2 crafting grid to refill the arrows in the quiver. The only difference is that it would free up a storage slot in the players normal inventory.

But still. Who doesn't want a quiver chock full of arrows slung across your back when your hunting or just general caving? They should make it so that the quiver can be added to any armor so you can see it over the armor.

Mojang shouldn't be worried about people complaining about new stuff which is mod-like. There are always people who do that.
But Mojang, please, please re-add the quiver.
No they shouldn't but it makes their too difficult to implement argument fall apart since the code is already out there; not to mention open sourced as well.
This community... a Mojang developer removes one feature and people start hating. Yes, it you may think it was a good feature, but 1.9 isn't ruined. There's a ton of other stuff like:
An End overhaul
New Arrows
Two hands
Grass paths
Subtitles
Shields
Better Command Blocks
Better animations for hostile mobs.
