You can do this with the customized world type, either prior to 1.13 (via an in-game menu) or in 1.16 and later by editing the json file for default world generation (the "expanded default settings" json lists structures separately and I assume you can just remove the ones you don't want. Note that they seem to say that the Ender Dragon is broken with this example; I have no experience so I don't know if that is still the case, or if the example given actually lists everything (it is quite disappointing that a game called "Mine"craft still has no way to customize caves; and otherwise the newer world customization is more limited than the old Customized world type, which let you change things like ores, dungeon counts, and more).

One used to be able to specifically turn villages off when creating a world, so removing this feature, by only allowing toggling of all generated structures, is a retrograde step.
This JSON stuff looks pretty complicated, so it'll probably take me some time to get my head around it.
I'd like to start a game without villages, but with all the other generated structures.
Is this possible? If so, how?
