I've seen a lot of people on YouTube creating Iron golem farms and tutorials on how to make it. Wouldn't it be better if you just went branch mining since you can also find diamonds?

You can get iron and flowers for the red dye even without doing anything, provided that a player is present to load the chunks. Leaving you free of doing everything else.
This mean that in single player you can leave Minecraft running and get basically free iron and red dye, and on a server it means that a farm is running every time as long as you build it in an area in which players are present most of the time (for instance, near the server hub).
On the only server I play on I built an iron farm in the spawn chunks (I've also done it in several single player worlds).
The iron farm regularly produces iron ingots as long as there is, at least, one player ANYWHERE in the overworld.
That means that iron for tools and armor is abundant.
IMHO that makes the game that much easier.

how else do u power ur beacon, make a ton of hoppers, get free minecarts for tntminecart blast mining(for getting like sand or netherrite) without spending alot of time mining iron ore and for players who dont die u need only 2stacks of diamonds in the game anyways. and even if u now run out of some minneral u can skip mining the iron ore saving time mining for lapiz redstone and diamonds for example.

I think it makes people feel clever when they build an automated production process. But as you say, if you're exploring undergound anyway, and searching for diamonds, an iron farm should be unnecessary. I always end up with more iron than I know what to do with.

I can easily mine all the iron for even a level 4 beacon within just two play sessions - I've mined a total of more than 600,000 iron ore in my first world and well over a million in all my worlds combined, at the rate of around 750 per play session, occasionally over a thousand, even up to 1,300 in an extreme case (a beacon requires 1476). I've also collected more than 175,000 rails (equivalent to another 65,000 iron) from mineshafts with only about a tenth of that used in an extensive rail system connecting 19 bases across a 6600x6600 world:
...over this period I mined an average of 3476 resources, 3256 ores [including 787 iron], collected 5504 XP, and killed 361 mobs - every day for 100 days straight.
I even have 1643 diamond blocks, mostly collected without Fortune, which I stopped using in this world years ago because I only cave for fun, not to collect resources that I need and the additional drops filled my inventory/ender chest about twice as fast (except what I use while caving, which is a fraction of the total; in this world I actually trade for diamond gear to repair my gear but that is totally unnecessary).
Naturally, I do not have any sort of resource farms (trading doesn't really count, it is also entirely manual aside from crop growth), or even an XP farm (I gain an average of over 5000 XP per play session, which also meets my needs many times over; early on I get most of the XP I need to enchant my "caving gear" by mining quartz), I've even nerfed them in my own version of the game, which heavily emphasizes the mining/caving aspect of the game - you need to directly kill iron golems for them to drop iron (which Mojang tried to implement in a 1.8 snapshot but it caused such an uproar that they "had" to revert it) and I removed spawn chunks (mainly for optimization purposes, same for some other changes which nerf farms, others are actually bugfixes, such as patching looting bows/splash potions/etc).
Also, I don't consider AFKing to be a legit way to play the game - why even play if you are just letting the game play itself? You can at least do something else while waiting; then again, many farms require that you remain nearby or regularly visit the spawn chunks in order to collect resources, which is another reason why I've never used them since I'm always out exploring; likewise, I don't find beacons to be worth getting since they would only work well at my bases, where I spend very little time, and have never actually gotten one.
To download the other ones you need to make a folder in the versions folder for minecraft and put the client and JSON file for the versions in there. They all need to be named the same aside from file extensions. Once you do that, you will be able to choose that version when making a new profile with the minecraft launcher.
Agreed mate. But I think people just like to afk because they're lazy and want resources for a GIANT BUILD without any effort, and when they DO have the resources required, that's when they do play the game and build those giant builds.

Soo what's the need for doing it in survival when you have creative? And everything I just read is true.
I use Iron farms to collect iron while I am working on other projects. I have one at the main base, and one at my actual base. We also have multiple other farms such as the witch farm, guardian farm, etc... I am rarely AFK so all my work is done while I am on the server doing other things. I am working on an Iron farm that will use Evokers and vexes. It's not about being lazy, it's about thinking outside the box.
I find caves quite boring, much prefer the topside. I mine as necessary to get resources, but in general, in the time percentage I am willing to devote to mining out of my MC playtime, I generally get more than enough of every kind of resource I need, with a notable exception of iron. When I used to make do with just what I dug out, I would have a constant shortage of iron, and would often have to spend more time mining specifically for it, way more than I normally would. I am content with mining for redstone or lapis, cause I can get the amounts I need in short enough time. I generally eliminate the need to mine diamonds via villager cultivation. And I don't use a lot of powered rail, so my gold needs are marginal. So all in all, I can rarely justify the effort of building a witch, guardian or zombie pigman farm, but an iron farm is absolutely essential to my play style.

I'm just happier on the surface. I wish there were more underground structures, and maybe some biomes in between all those tunnels of gray.
I also enjoy the very act of making resource farms. It's very satisfying to take on a project with the specific goal of generating resources and then seeing that effort pay off.
Edit:

There are over 300 iron ingots in that tiny corner.

That looks realy good. Without ironfarms it would be a waste of iron.

TheMasterCaver's First World - possibly the most caved-out world in Minecraft history - includes world download.
TheMasterCaver's World - my own version of Minecraft largely based on my views of how the game should have evolved since 1.6.4.
Why do I still play in 1.6.4?
People just seem to be obsessed with transforming Minecraft from a survival game to a tycoon game.
Remember those versions that minecraft pranked us with? Specifically:
Those are still downloadable! Watch this video for 2.0:

Presumably because it feels more legitimate, since they had to build the iron farm and wait for the iron to build up.
I don't see anything wrong with it, it's just a different way of viewing the game.
On a server you've got rules that determine what you can and can't do, in single player, why should anybody else care?
Just testing.
it's just part of the natural progression to expand your Minecraft world and have something fun to do, and also the iron thing i guess
No
I think using ironfarms as a very abstract way to get iron.
The golem is a village protector.
As long as they drop iron people try to abuse that.
So do i.
When it comes to huge redstone machines you need iron.
Well i need iron. becouse i need hoppers and stuff.
Sometimes it feels like cheating but when i look at villager trades & enderman expfarms or the bed well...
