Well i mostly agree by what you mean but still the old terrain is sooo much better compared to this realistic terrain we have now,
if the old terrain is "Meh" nowdays terrain is "Super Meh" anyway i like some features from newer versions as well, such as hunger, pufferfish *eugh* ,
and well the temples and dungeons but thats how far it goes
I've jumped between alpha/beta a few times, I started with 1.4.5 and I make videos on mods from 1.7.10 to 1.15.2 so those versions are always in my mind.
Alpha/Beta are fine, a bit lacking and I do miss the way the game feels and the quality of life features. I notice in 1.2.5 how the game feels and how you go about attacking mobs and it feels strange, while in 1.7.10 the lack of Ctrl to sprint or sprinting while flying is something I can never get used to and lack of swimming in anything prior to 1.13/1.14 feels awkward.
I'm a fan of 1.10.2 for mods mostly but still enjoy my time with 1.14/1.15 as I cover them all the time and I love the QOL, blast furnace, smoker like blocks, the treasure from 1.13 and the swimming.
The combat change in 1.9+ while something to get used to in 1.7.10 and 1.8 versions I don't mind and I sometimes miss the lack of a shield not being built into the game.
Obviously these a thoughts and all over the place but I think each version has features that are great for builds/command/redstone users while others might be good or necessary to survival players.
Besides mods being easier to find from 1.7.10 to 1.15.2 and me covering them and being versions I enjoy I got to say the older the version the more interesting it can be but the hard it is to get used to the limitations they have. Alpha/Beta I've rarely used as I have less I want to do with them modded or not and I use 1.4.7/1.5.2/1.6.4 sometimes and don't have a problem with the versions but the modded ways of doing things back then are noticeable.
To me Mojang hasn't done a bad job keeping the game consistent with the same types updates throughout (nothing too dramatic, sometimes yes but mostly the same with a biome update every so often, mobs every so often, food every so often, the odd change like combat if the other updates are a bit bland or repeative to add), sure no dungeons that are 'epic' but I like I can add and remove mods to do that, and mods have made me care less for the features survival players want and just have a chill experience of a blast furnace or bees for Vanilla or Mod/Datapack potential.
I'm glad I can use a Desert Temple for a base and not a big desert dungeon, while I care less for the mansion. I like bees over polar bars for as you can guess mob drop reasons. Maybe it's just me, I can't say this to others that don't play the game anymore and don't even bother as they want dramatic changes that make it more an MMORPG and Minecraft like Hytale but that's not really what I'm looking f or when I play Minecraft and I'm sick of how RPGs/shooters/action adventure games have been designed in the last few years (I don't play many RPG but more so the other two) and the stats/benefits and key hooks aren't compelling besides the odd theme or 1 key game changer feature. If I hate the game I have to deal with it, in Minecraft I can hate any version and change it how I want. I think of Minecraft like a game and an engine, I might want survival in Vanilla, survival in modded, creative in either and I can still find something in it. The updates might not be ground breaking but they do reach each audience/community regardless of the value each player gets out of them.
Command/builder/redstone (and introduction/expansion of datapacks in the last 3 updates) communitoes have had it good I'd say though.

Well i guess some features are really useful,such as ctrl sprinting, shields maybe but minecraft changed from the old and basic sandbox that it once was into a more cosmetic paid game (I mean the bedrock edition) and the java edition it just feels like a rpg more than mc , like imagine playing nowdays any good minigames on 1.14+ , skywars: (bad pvp) , bedwars (the crouch animation disables fast stacking) and i might say there are some good minigames that are still playable such as capture the flag and maybe factions but it just feels really different, at least for me
I'm curious as to why you consider release 1.0-1.7.10 to be in the same category (as your title says "Beta Vs Official Release 1.0 - 1.7.10 Vs The latest Versions"). There's a big difference between release 1.6.4 and 1.7+, mainly changes to world generation (at this point Mojang started emphasizing long-distance exploration to find incredibly rare features, so rare that they later added special maps to help find some of them. They also made "Minecraft" less about mining when you consider the changes they made to the underground).
I consider this to be a major turning point in the game's history - considering that I haven't actually played on any version past 1.6.4 (in fact, I haven't even touched any release since 1.13, which I only played to verify changes to cave generation, which comes up with nearly every release, though in this case they actually did change, if simply due to a change in how the RNG is used, unlike the changes in 1.7). Otherwise, I have basically no opinion of later versions since they may as well be an entirely different game (over on Reddit I recently got into an argument with somebody who kept trying to convince me to play the latest vanilla version, even Bedrock over Java, despite clearly stating with multiple pieces of evidence why I had absolutely no interest in it. They then claimed that what I played wasn't even Minecraft).
* Darkness both at night and in caves, caves felt a lot more dangerous as it felt you had to torch spam everywhere and watch where you step!

To be honest I don't have much to say about this period. I just carried on doing what I was doing. Yes we had temples and villages, the latter which I was really unsure was needed to begin with and took a long time to get used to.

*Whilst I wasn't overall thrilled with horses I did come to love them, and donkeys, especially donkeys. Horses for an extra mode of travel (CON: Trying to navigate through trees!) and donkeys because of more mobile storage space and both were nice additions really.
*Added biomes like savannas and the mesa biome as it was known were welcome and associated blocks.
*Amplified worlds were very welcome, giving us that feel of a terrain generation we lost id slightly OP in scale! Still very much missed when taken away with buffet being a mediocre substitute
*The underwater temples aren't fulfilling enough. Aside from everyone and their mother draining them on reddit, some ugly blocks and a few gold blocks don't exactly make it worth it. Unless you want to make a guardian farm, then only the sea lanterns are nice or worthy.

Not much to say here, but I for one did like the combat changes and shields, even though it's mostly from a pve perspective. My new favorite block was added in 1.12 I think, 16 different colors - concrete!

For me the best thing has been the 1.13 update aquatic. Adding life and vibrancy to the oceans with colourful corals, dolphins, shipwrecks, ruins let along the better water mechanics - swimming!, underwater plant life et al, It was very much needed as the oceans were just something you crossed and when there was a time they were made bigger so you might not see land for longer could be very dull and tiresome!
With 1.14 it was a mixed bag, villagers have continued to been "Tweaked" for good or for worse, I suppose the trading system is better but can take some getting used to. Pillager raids have grown on me, whilst I seldom start in a village - just having them pop up can be a fun challenge I live for and I do enjoy doing the raids.
Data packs were also very welcome, I only use one that very slightly tweak vanilla.
Onto 1.15 and I am one who is really not overly fussed with bees and honey blocks or obsessed by them. I am worried about these continued combat changes and feel they are only happening because pvp on servers cried so much after the combat changed in 1.9. I don't believe any of these "Evening it out" on all platforms/editions. I'm more excited for the Nether Update in 1.16 to be honest as whilst it can be debated if the Nether needs more, it is pretty exciting to be the changes and the direction they are going with it.
As for the future, I hope they don't add too more many main bosses to Guardians, ender dragons, wither, this isn't a 2D platformer where you fight bosses all the time, Mods can do that. Play how you want, but the base game doesn't need a billion mob bosses, and I think we can cap things like ruins and temples now too personally.
I don't think personally there needs to be many more animals pets, for animals you can argue some just add ambiance (Bats, maybe a few more birds not just parrots?) whilst others give ambiance to their sterile surroundings (Parrots, polar bears, fish & dolphins). Love foxes irl but did we need them, or bees? Perhaps not. It's not just about building but exploring, letting your world be what you want to it be whether that's survival, creative or modded. The base game should stay true to the quite spirit it began in, we've had structures added in, life (Villagers/illagers) now I'd like to see the world continue to evolve not just what's in it either structures, animals and the like.

1.13 added an ocean update... which was relativly lame but it had some intresting stuff i guess like....ehm....
Ok! 1.14 has.....CHANGED the OLD textures...which were one of the best part of the game.... Yes yes i know
you can still get back those textures...but really, new players need to play whit the "New" and "Improved" textures?
I know the textures might be a bit better...but it doesn't feel like minecraft...
Now... The content part...Oh yeah...
1.13 added tons of useless and overall bad content such as "The pufferfish" and "Turtles" oh yeah and my fav
"Phantoms" Which are actually pretty neat and intresting and their drop mmmm actually USEFULL!
Now 1.14 and the updates after in my opinion are a joke...a lot of useless animals,items and features
