So on a windows PC you can go to the “saves” folder, right click on it, then restore a previous version so you can go back to how your world was before the last time you saved and exited.

I don't know who told you that, but I know of no way to restore a Minecraft world to a previous save in Windows.
Of course, someone MIGHT have a mod that provides that function but regular Minecraft in Windows does not have that capability.
Minecraft bypasses much of Windows file handling.
Deleting a world does not place the deleted world folder in the Windows Recycle Bin.
Once deleted Windows has no record of it having existed at all.

The world hasn’t been deleted. It’s just been saved over. As far as I know on all platforms the previous file will still be there. It’s just how you can get your hands on it.

Does anybody know if there is any way of reverting to a previously saved game on MacOs?
I've messed up and want to go back to before my most recent save. I know it can be done in Windows but I can't find a way in MacOs.

I would assume since it is macOS MC files would be in ~/Library/Application Support. Sorry if it is no help.
