So I've seen on a server someone who made maps that had images on them. The thing is, they don't seem to have made them with blocks. Is it possible to store images onto maps in a client world, save it into the saved hotbars, and then bring it to the server?
maps only show fixed sections of the world, I don't think there's a way to edit the map items to make them show anything else and because the sections are fixed to a global grid you can't even change which part of the world they show. Are you sure they were maps and not picture frames?

This is all incorrect; you CAN edit the map data file to make them display whatever you want, using a program like one of these:
Aside from that, you can also edit the data files to move the center to wherever you want - the area they show is only fixed when you create a map (including zooming out) and can later be changed to anything (I've done this myself to correctly center a new map after I modded them to align to a grid, but didn't want to have to redo the maps I'd made before):

zCenter: Center of map according to real world by Z.
This is pretty much like using a tool like MCEdit, except instead of editing blocks in the world you are editing the data file for a map item - nothing more or less, so anything is possible (except for adding new colors or the like, but you can unlock a 4th set of colors that aren't used by vanilla; the image also must be 128x128 pixels).
I love how the Hermitcraft team will find some off place over water, then build their "image" out of blocks over the water. THEN they try to outdo one another in how cleverly crafted their "logo map" is. It's pretty cool. I know you said, "

", but with Hermitcraft they built them WAY the heck out-there, so it wouldn't interfere with anyone else's projects AND you can do it pure-survival rather than using external map editors. If you don't have access to the server for making such maps and you want a specific HermitCraft episode where Mumbo Jumbo does it, let me know and I'll try to track that down. OR you could just download the entire HermitCraft Season 5 map (I think) and see for yourself how it all looks and works together.
I also note on one Marketplace map I purchased, they had "logo" for the map done the same way, built into the world and captured by the in-game map. It might take more time, but you may find more satisfaction in doing it, and knowing you can do this ANYWHERE that you can claim the space for making it.
