We know that the defining aspect of minecraft, physically not philosophically (As in creativity), is the cube/cuboid look of it. But consider the direction it is heading in. If you look at a cow in minecraft it has such a bad detail in shape that it looks nothing like cows. Fast-forward a few years later and you end up with a newer mob, the polar bear, which with a tiny bit of smoothing, becomes just like polar bears in real life. But here is the million dollar question, does this even matter? So long as they keep the body of the shape of mobs at a 90 degree angle at every vertice does it matter if they become more detailed.
I won't deny that even classic mobs like chickens have block details on them but, if you take a look at how small the body cuboids get down to for detail, it seems quite different.
So, to summarize it all up-
So long as mobs are made up of cubes, does it matter if the number of cubes increases to add detail and is minecraft heading in this direction???
Minecraft won't become a game without cubes, you don't need to be concerned about that. But it is heading towards being less distinguishable... I personally feel like almost all of what Mojang has been doing lately are bad moves, from my personal taste. Vanilla updates, as the name should suggest, should stick to being not overly complicated, and being a flavor that almost everyone likes. That is how the game was for a while. Now the updates are splitting people, and they aren't just making improvements or additions to the game- they're drastically changing it, from what it was recognizable as not too long ago; from what everyone thought was good.
They are rushing out new features, and I almost question if they are really focusing on quality or things that everyone likes- it's practically a publicly available modpack now. There are still major problems with hacking, x-ray, and as a regular player if you go on most servers, they suit specific kinds of players (the OPFactions player, the grind skyblock player) and still have ranks that violate the EULA. When I first started, most servers were survival, and many different kinds of players enjoyed it then (regular survival is missing from multiplayer now).
... Maybe it's just a me problem, but I've become less optimistic about it... and more pessimistic. I can't get everyone to agree with me, but the people who do agree are too busy or don't want to put in the effort to make a difference (I'm trying to help start a project to improve this game in ways everyone likes, fix major issues and make multiplayer much better and include what was awesome about it before).
Polar bears and horses seem to be fine. Whilst they're more complex than say, a Cow or Chicken, they're still tolerable. IMO the issue isn't really the aesthetic of the mobs, so much as the path the game has taken within the past years.

Figured it was time for a change.
