I've been wondering to my self recently: what is the species the of oak tree and of apple that you find in Minecraft?
So I did some research and kinda found the answer. It's the closest thing I could find and the truth is, um, pretty discusting... And your're probably saying: apples can't grow on oak trees! But just read this:
Since 1 block in Minecraft = 1 meter, the Minecraft oak tree can grow 5 to 6 m in height and has a diameter of 1 m. It also grows in acid soil (dirt)
The closest tree I could find is the Valley Oak tree wich can grow 47 m in heigh and has a diameter of 3 m. These trees can also live up to 6000 years! Even though the mesurements are completely diffrent, it's still the closest thing I could find. We'll just say that they're young. Now here's the ''apple'' part. There's a type of wasp called the California Gall Wasp an it lays its eggs on the specifically the valley oak tree. To make the red egg grow or commonly called a gall or an oak apple, the wasps release chemicals that trick the tree into giving nutrition to the egg.
So yeah, all the apples you might of eaten are wasp eggs... But it's just a theory!
The tree could be just a normal apple tree. But I think my theory is accurate.
The correct answer to this is Notch wanted Apples and he wanted them to fall from trees, but instead of making an apple tree he just slapped it into the code for Oak leaves. There isn't anything more to it really, just a bit of developer laziness.

Yeah, I've commented elsewhere that either it ought to be an apple tree or they should be acorns (wich are also edible but rather horrid tasting) but in a game, it is little more ridiculous than some of the other decisions that were made.
Actually, acorns are poisonous to humans. They have to be ground up and washed multiple times before they are edible.
If eaten straight from the tree. In fact, almost any native culture have used acorns for food. Simply grinding them and soaking in water changed a few times makes them edible.
Although eating acorns in small quantities is unlikely to cause a severe medical reaction, acorns do contain tannins that cause an upset stomach when eaten in moderate to large quantities. Because these tannins also give raw acorns an unpleasant, bitter taste, acorn poisoning is rarely a concern in humans.
The tannic acid in acorns has been used for millennia to tan leather.
