I've heard about the game for a long time but never had time to try it. However I can free up a lot of my gaming time now as I'm waiting for the next Nintendo console, so Minecraft will get a new member :).
That's why I needs some helps about which version of Minecraft to buy. From what I read here, the PC version is superior but it lacks portability. As I don't use my computer a lot nowadays, it could be nice to play the game on the go with iPad. I still prefer graphical quality/content over portability though, so if the mobile version is too inferior in term of quality then I would chose the PC one. (Is there anyway to run the PC version on iPad?)
Also if I'm buying the PC version, then which time in the year is the best to buy it? Should I buy it now or should I wait until they release a new expansion or something (it's not the first time that I bought something and a newer and better version come right after that)?
Also, is this game all about building stuff? I don't have any experience in that field so any pointers is welcomed

A lot of how to play focuses on specific aspects instead of the whole gameplay. For example, a lot of videos will say like punch a tree and build a house. However that is not realistic because at night, monsters will spawn and they will kill you while you're building your house. There are also a lack of pvp tutorials for beginners, which is vital when dealing with monsters and other players. So I think the best solution for now is to watch my video series which the first episode will come out very soon (maybe today??) Just Kidding, you can watch paulsoaresjr's tutorials
Paulsoaresjr has a great tutorial series but might be a little outdated, Minecraft Wiki is your friend also: http://minecraft.gamepedia.com/Minecraft_Wiki. PC version has the best features, is likely to get new features first.
P.S: You should buy the game when 1.9 comes out which is on Thursday, 25th of February 2016. 1.9 HYPE!
Personally I think the PC version is much better. Not only does it have more content but it has many more mods and servers, for when you have learned more about Minecraft. I also get bored of PE quickly.

The PC version is always $27. There are no DLCs (luckily) on the PC version.
The game is not all about building, there is also mining, exploring and fighting, although the fighting aspect is not needed in peaceful mode.

PC edition cannot be run on an iPad at all, it is far too intensive. The PC version is a vastly superior game, the iPad edition is only really for very casual players. It mostly appeals to young children who love Minecraft in any form and need a distraction in the car or something. The world size and content is really limited in mobile versions and I personally either wouldn't bother with iPad or would just get both.

It is a sandbox game, which means the goal is to do whatever is fun to you. The game officially has bosses and an 'ending' now, but you can still play after that. Some only love to build and nothing else. Others want to survive in the hardest difficulties or with self imposed rules, sometimes. Others play minigames - the game has a thriving server community with custom plugins (basically mods) which do not require any downloading on your part, so you can play customised games based on well known gametypes such as hide and seek or one in the chamber, and some Minecraft traditions like walls and spleef. If you want to spruce up the game even more, you can download mods, or create your own if you're tech-saavy enough. These are different to those server plugins I mentioned (which you don't download) because they affect both single player and multiplayer worlds on the client side. Basically, they're fancier and are more commonly used for new items and stuff. These client side mods can basically make the game whatever you want. The community is really diverse, and a lot of players who actually don't like the base game that much have tons of fun playing what is essentially a whole other game with mods.
But as others have said, I recommend online tutorials. The game can be pretty overwhelming at first, but most of what you do follows a pattern and it is usually easy to predict what comes next. There is rarely a sudden change in your methods of progression.

Not really; P.E. actually has infinite worlds just like PC, and its level of content is somewhat comparable to PC (iirc the only major thing it's missing is the End, which until 1.9 is extremely small and has little purpose). Plus, it's more polished than the PC version (somehow). I would say PE is probably better than console editions.
As for the OP's question: PC is vastly superior to all other versions of the game, mostly because it has a huge variety of mods compared to other versions. At least in my opinion, mods are the best way to get more longevity out of Survival. Only get pocket edition if your computer can't handle Minecraft, and even then I would only get P.E. if you plan on building a fair amount.
Updates come out sporadically but are always free; one should be coming out in a few days/weeks for that matter. IIRC the game has only gone on sale once a while ago, so it doesn't matter when you buy it.
Minecraft's main difficulty comes more from a lack of knowledge about the game rather than any actual challenge within the game. You'll probably find it quite hard at first but once you watch some tutorials as others have been suggesting and get the hang of gameplay, it should become easy as pie.
The game is a sandbox, so you can do pretty much whatever you want (though it does have a focus on building); the problem is, most aspects of game (building being the exception) are pretty bad. You can fight things, but nothing is particularly difficult and the combat system is extremely underdeveloped; an upcoming update remedies it somewhat but it's still a fair bit worse than other games. You can try to survive in the world you're thrown in, but once you know what to do it becomes very difficult for the game to kill you; it's so easy that it stops feeling like surviving. You can explore, but the world generator is so repetitive that once you see every biome you've seen pretty much everything the generator can create (even though the worlds it makes are infinite). If you don't get the game with the intention of building (the one good aspect) or multiplayer/modding (to remedy the bad aspects somewhat) you'll find very little of value in the game.

But yes, you're right, I slipped on the infinite worlds thing. Haven't played PE in a while. It is still missing an awful lot. And if it isn't now, it will in 1.9. It will always live in PC's shadow, constantly trying to catch up. That is why it is inferior, and that is why the level of content isn't really comparable in my eyes.
