Because if you get a Poisonous Potato, you can just toss it into an incinerator or just leave it. While Chainmail Armor on the other hand is too weak for its rarity. Why pay Emeralds for something that's worse than armor you can make yourself, for free? And if you do want Chainmail armor without having to shell out Emeralds, then it will take you quite a lot of mob killing just to get some boots or the headpiece. For it's rarity, Chainmail Armor is more of a trophy item rather than a viable piece of protection, and that's what makes it so worthless to me.
I agree the poisonous potato is at the top of the list. For me wood tools other than the wooden pickaxe are worthless. I never ever craft them. Even the wood pickaxe is only useful to get at least 3 pieces of stone so I can craft a stone pickaxe.
Breed a ton of librarians. Eventually you'll get things that are ridiculously good trades. I can use my own villagers as an example. A Feather Falling III book for 16 Emeralds. A Sharpness V book for 18 Emeralds. And my personal favorite, a Mending book for 14 Emeralds.

I am pretty much they are seeds.. I always have my inventory full of them after a run in a field.
They're growable for food, so they're not useless.
Poison Potato. Can't even decorate with it.
