Hey everyone! Today (or a few days ago if your reading in July 11th, 2015), I just made my own custom Minecraft (or Cave Game) version.
Instructions
(NOTE: I only edited the textures to make it look different)
1. Install paint.net
2. Open any Minecraft jar file (EX: rd-160052.jar)
3. copy and paste them anywhere that is not in .minecraft
4. Edit your textures
5. Copy and Paste your normal folder (EX: rd-160052) in .minecraft\versions
6. Open the original jar
7. move your files into the jar
8. Name it (EX: mc-160052)
9. Name [insert version here).json to what the folder is (Same with jar)
10. Open the json file with Notepad or TextEdit
11. Name the [insert version here] at "id" to whatever the jar, folder and json files are.
12. Play it and enjoy.

If you want to add new content, it's easier to just make a mod.
What i'm saying is: I don't understand why you would want to mod or, in your words "create your own minecraft version" this way.

Thanks now minecraft is 100X better than before
