What do you tell people when they tell you Minecraft just isn't fun? How do you get them to believe it is more than just chopping down a tree and building a shelter. Without a server that is modded with mini games, what fun is there to Minecraft? How do you convince them?

People have different tastes. If someone has tried something and doesn't like it, having someone else attempt to persuade him he is wrong is unlikely to succeed.
You will never convince me that playing golf is fun. Given the number of golf courses in my local area, I suspect this is probably a minority opinion on my part. I still don't think golf is fun, I have what I consider good and sufficient reasons for feeling that way, and it's highly unlikely that anyone is going to convince me that I'm wrong about what kind of fun I like to have. Minecraft is the same way. So is everything else.
It's good that we don't all like the same things, or what a terrible shortage of haggis there would be.
You must educate them more about Minecraft. They can't judge it if they believe it's just punching trees. You must teach them of the endless possibilities within the game and then they will be able to decided wether they think it's fun or not.
If somebody who knows nothing about golf goes to play for their first time and they do not get a hole in one on their first shot, is it automatically ok for them to give up and just say that golf is boring? I don't think so.
In Minecraft, they can't just load up the game, punch a couple blocks and then say the entire game is boring. Sure, they may find punching random dirt and trees to be boring, but that doesn't make the whole game boring because they have no idea about everything else you can do in the game. Minecraft isn't just about digging dirt and chopping trees.
When I first played Minecraft, I went in punching random blocks and I was thinking "WTF is this crap?" I didn't stop though. I kept playing because I was told that there was more to the game. Night time came around and I learned all about the monsters that attacked and how building a shelter can help protect. Then I went on to learn so much more about the game and I loved it. Now if I experienced all of this and said "Minecraft is a boring game in my opinion," then that would be okay because I knew what it had in store for me. Until someone reaches that, they can't just judge decided whether they like the entire game or not.

Peter: Yeah, climb any mountain, rent any video, dial any phone. And not just our phone, Lois, other people's phones. Decent phones, God-fearing phones, phones that everybody else gave up on, but we knew better because we were a team!

Some people don't like certain games. He may have gotten a rotten impression of the game from all the criticism it gets, but it's up to him to try it out. At the very least, send him an old cracked version and ask him to check it out when he has nothing better to do, that's how I got into minecraft when I thought it was stupid. Ultimately, it's up to him to try it out, and if he doesn't oh well. Once you guys get older than 13 you'll stop judging most things before you've tried them. I'm poking fun but seriously, I assume y'all are fairly young for him to behave that way.

We all have met people like this. You can try to convince them, but most wont care. Its a matter of personal opinion, everyone has one. They may not like the exact things you like. Its good to remember that everyone has their opinion, and some people take offense from people forcing their opinions on them. I am sure its not your intention, and i am sure you were perfectly polite about it. But people have different interests, and Minecraft is not for everyone. Some of the common arguments against Minecraft are that the graphics are bad, and that it is boring, the fact that they find it boring is again, a matter if personal opinion, But the graphics, (or in Minecraft's case, texture resolution) is much higher than games such as CSGO, Skyrim, and even some of the more recent COD games, all of which are still popular today. What they really mean by, "it has bad graphics" is that they dislike the blocks. I don't have any dislike towards these games, but i guarantee that they enjoy, and probably frequently play games such as CSGO, COD, LOL, and Halo. In my personal experience, when people have played extremely competitive games, they will not typically enjoy Minecraft. And again, for the last time, it is their opinion, even if they eventually fold, and play the game with you, they probably wont be very fun to play with considering they had already made their mind up about it.
As everyone said it is different tastes and different personalities. If they never played it and are judging it, that is a different story. Tell them what it really is without making yourself a fool, unless of course, most of your school favors Minecraft.
