I like to think of them as elite members of a dark cult, sort of like The Silence from Doctor Who. They worship the Sponge God, for they believe that one day he will come and drain the oceans, allowing their mighty civilization to rise from the depths once more. The Sponges dropped by Elder Guardians are actually religious idols. What's more, I got proof. The Guardians are not fish, since they can obviously breath above water. What's more is, they also make a hollow sound when hit, suggesting that they're just a shell that someone - or something - is controlling. Furthermore, look at the sponge. How could a 3x3x3 object hold 65 times its volume in water? Clearly, there is something more at work here. And anyways, why the hell would a fish carry around a sponge? IT ALL FITS!
My avatar-Madison Gotha. She knows various weapons, she's a mage/sage, and is somewhat immortal. Madison has the capability of taming and communicating monsters, a genetic trait passed down by her father. 26 physically, 1400-something mentally, and a Lofty Peakian/Zenithian mix. Doesn't really like being called an elf and hates being called human..
I might be Moderator, but don't bother treating me too special. And don't make tons of Ban Hammer jokes, please. Also, I'm an Off-Topic only Mod. Don't ask me to lock a thread or something if it's not in the off-topic

I'll give my own two cents on this. Seeing as though a Guardian's body seems to be a prismarine block, I feel like they were created. Proof is that some of their sounds sound a bit robotic (listen to the elder guardian while it's idle), and that what kind of fish would have lasers (if they even are lasers)?
They're a magical construct created for defense by an ancient species of Mersteves. The creator forgot one little detail, causing the guardians to include all mersteves in their target list.
Like, what are they? Fish? Robot things? Living blocks?
Comment below your theories on what they are.

Transformed Sky Does Minecraft (kills squids)
They are called Guardians which seems to like an odd name for a fish to me so I think something created them.

...But I doubt that's what they actually are.
Eccccccccccccccccccccccccccccccccccccccccc
They are these random things that kill you in the game 'Halo' and they seem to be the highlight of Halo 5, also being featured in its subtitle.
Fish.
They are just fish.
Freaky, freaky fish.
Fish with an obsession with Sponge.
