Technicly servers are allowed to make money from cosmetic items, however no one will buy these.
For a game so focussed on the comunity, why do this? Well, lets look at whats been happening, Minecraft realms comes out, EULA tightend, Microsoft aquires Mojang.
Servers are unable to support themselves without income so they will eventualy die out apart from one or two subscription only servers and mid sized servers ran as hobbys which people are preaperd to fund.
Meanwhile Mojang is going to sell minecraft realms because everyone already has minecraft,
Well, Thats my opinion.
But you are missing the whole point of mojang enforcing the eula. The reason why is because Mojang was getting tired of angry parents asking them to refeund a 2000 dollar rank purchase on some server. Also, it was to stop p2w

Life is like a box of chocolates. You never know what you're going to get.
Last I checked, you're getting a box. Of chocolates.
... You underestimate the worth of cosmetics to people.
Quoted for the truth here.
I've seen some F2P games with just cosmetics in their Item shop that makes the game money, and they have been around for quite some time, and still are up and running.
A lot of people love cosmetics, and will pay $2-3 a pop for a couple day cosmetic item, that will vanish after a month or so.
However, I have seen quite a few servers that find a way around the EULA, and actually make "donations", so that people will gain certain perks (Such as mod teleports, mod items, that sort of thing.), that aren't in vanilla minecraft.
Okay, so if I run a prison server, I'm not allowed to give donor mines and donor picks that are better than regular ones? Arkham does, so what's the problem with me doing it? It's not technically p2w. It's prison, more like Pay2RankupFaster, p2rf

Just because someone is doing it, doesn't mean it's legal. Report the server and move on.

Wait, so if I give donor mines that help someone rankup a little faster, it's illegal?
Can I sell boosters, which provide faster gold gain, XP, or other in-game resources for hard currency? No – boosters, item generators, and all other features that affect gameplay are not allowed.
Bolded the important part.

you can also sell a slot on your server. people can pay acessing a special part of teh server works aswell.
Again, no, they cannot.
Can I charge access to a specific part of my server, such as a minigame or world?
No, you cannot charge for any part of a server. Only the access. Once on a server, all players must have the same gameplay privileges.

Basically what Mojang said is they didn't want people getting angry because they wanted they're $100 back for their kids buying gameplay features, thus calling them and giving them a hard time. So yes, you CANNOT charge a fee for anything that alters gameplay, but you can if it has absolutely no effect.
Many servers don't follow the new eula (That doesn't make it legal but if they don't do anything to the largest servers...)
On one minigame server donators can choose which team they play on, while this has only a minor impact on symmetric maps not all their maps are symmetric, some of them are attacker/defender maps.
Being able to choosee team also means that people who have donated stack on one team.
Whats the new thing big servers did to keep the earnings ?
