So you're inside a cave or ravine you just discovered. And you've been in there a while. And even though you are painfully aware that your supplies are dwindling, you can't seem to stop. So you see a cave opening you never explored before, or another deeper ravine and you want to keep going, carefully marking your way so you don't get lost...
Almost died in the ravine I was exploring. Found two others in there and nearly ran out of torches before I decided to bug out.
So do you all keep going despite your supply problem, or do you have a personal set limit so you know when to quit exploring?

That's a problem I have too, so I leave small chests where I can find them when I need to manage inventory space. Eventually ran out of material to make them though...
Yes. I almost always continue to mine/explore until I've either completely exhausted my resources (even if it means mining in the dark until my pick breaks) or my inventory is tapped out.

Exactly as you said, it's running out of inventory that's a problem. Toss dirt and gravel, try to turn all remaining wood into torches, anything to free up a spot.
That being said, I'm definitely one who wants to see what's around the next corner, what's over the next ledge. Even if my inventory is loaded up with valuables, I still want to see. It almost never gets me in trouble, I usually just have to decide to come back later after unloaded my inventory. I have had the odd spelunking trip where I ate all my food, and my tools are breaking. Then I'm crafting furnaces to make iron picks on the fly, and eating zombie flesh to ward off starvation. I take that as a sign, it's time to head back to the surface and my base.
Well, I guess you know what I'm like; exploring caves takes up like 99% of my play time (after I started a new world, built a base, killed the dragon, etc). In my case, inventory space is what limits me, even when I used a backpack mod that gave me four and a half large chests (4 big backpacks plus one small backpack) of extra inventory space (I currently only use mods that I made myself, based on vanilla items/code, including a double-chest-sized Ender chest). That despite the fact that I turn what I mine into blocks (which enables you to carry up to 9 times more stuff), returning with a couple dozen stacks of blocks of everything from coal to diamond, plus chest loot, rails, etc (I also mine even coal with Fortune III; this is the only pickaxe I use (the other one, with Silk Touch, is for the Ender chest); expensive to repair (37 levels for one diamond) but I easily reach 40+ levels between repairs); with my backpack mod, I've returned with more than a double chest of iron ore on occasion (with a Ender chest I mine around 5-6 stacks, then smelt it before continuing).
That is to say, you can see how much I explore every time I play; in this case, two abandoned mineshaft complexes and a large cave system, plus remaining parts of previously explored cave systems, and a few ravines in the mix:

The changes to caves in 1.7 also means that I HAVE to play with mods regardless; cave systems are just too small and not interconnected enough (most of what you see above is naturally interconnected, aside from a few dead-end surface caves, or from mining into a new cave when mining ores).

Wow.... before seeing those pictures I had no idea how large those cave systems can get... O_O
As for inventory control, I tend to leave chests at intersections (embedded into walls in 2 block high holes) high up in the wall so Creeper attacks don't hit them even if they kill you. I try to take a bed along too, but I keep running out of sheep.

I've nearly gone to that edge several times. Every time I see a dark area I didn't notice when I first went through I keep saying "just one more..." And it's almost hard to resist. T_T

Why do I still play in 1.6.4?

When I was playing in Beta there wasn't really oceans, More like huge lakes and rivers everywhere.
