Well since you rephrased it like that, I'm not completely sure. The community is pretty erratic in its decisions, and stuff like that could go either way.
I wouldn't mind oceans becoming more dangerous. Storms, sea monsters. I love sailing around continents and mapping them, but it's a fairly boring process consisting of the following steps:
Make a boat
Sail to 50-ish blocks from the coast
Follow coastline
At sunset, move away from coastline
Wait until sunrise
Repeat from #2
A little kracken action would liven that up, as would hurricanes.

1) When people and mobs are attacked, limbs and pieces of them fall off as you hack them apart
2)When on fire you become disoriented(Nausia effect)
3)Things disintegrate when they die from and explosion and turn into little particles that float away
4)People liquefy when they die in lava
Add a thirst bar. Drinking Water bottles, potions and milk, and eating certain foods (apples) will replenish it. However, eating "dry" foods will deplete it faster.
Also, make blazes weak to splash potions (get it, 'cause splash potions have water in them.)
I'm pretty sure people wouldn't like the new "realism" of Minecraft, considering what made it popular was its lack of realism. However, like DocHarley said, a Kraken or something of the sort might add some more fun into the game, without bringing it to the AAA side.

I would actually start to dislike Minecraft if Mojang made it more realistic. With 1.7 looming on the horizon though, there might be enough realism to last for a while.
I don't think anyone would say no to more interesting and realistic ocean biomes, filled with marine life including deep sea creatures and plants/coral etc along with random shipwrecks and submerged ruins to explore.
Another thing I wish is simply a more realistic survival mode. I'd really like temperate to play a critical factor in your hunger/thirst rate and perhaps what clothes you wear as well. If you've ever played the Frostfall mod in Skyrim, I think that would be an amazing feature to add for snowy biomes. Survival mode simply doesn't feel like a survival mode right now.
Of course, more realism doesn't necessarily mean a better game. Part of the game's charm is its quirks, fantasy biomes, creepers etc.
In my opinion, some more plants, water creatures, and more realistic biome types (I'm pretty sure I've never seen a Mushroom Biome IRL)
