Ok. I see what I can do. I want to create custom mob spawners but I'm not sure how to do that. Can anyone give me a link to a tutorial? Also, about mobs picking up armor and weapons, I droped a leather cap in front of a zombie, but it didn't pick it up. Any ideas as to why?

I'm a map maker as well. I've made several maps before that would fall into a catagory where you'd have to fight off unique mobs. Heres how I do it:
1: How do I make mobs not burn up in the daylight?
You can do several things, the most common way is to put a helmet on them, this can be done in two ways, using NBTedit and change it so that the mob of your pick can hold weapons and wear armor. The other way is too download Sethbling's "create geared mobs" filter for MCEdit, which you HAVE to have if you're going to create a GOOD map. A link to Sethbling's page is below.
2: How do I create spawners that spawn custom mobs?
First you create a mob using the "create geared mobs" filter.
(The filter works like this, create a chest. the first slot of the chest would be whatever's in mobs hand, the next slot is whatever would be on the mobs head, then chest, then legs, then boot. After that nothing. You can adjust the chance of the mob dropping any of these items. If you wanted a mob to drop gold, you'd put the gold into maybe the leg spot instead of armor, of maybe the feet spot. then you'd turn up the percentage of the mob dropping that item to 100%.)
Then when you have the mob you want go into MCEdit. You select the area around the RED BLOCK, (red blocks are entities.) then hit "Create spawner" There will only be one thing to adjust, but it shouldn't effect anything. If it works, select the spawner and hit "Copy" if you want to make the same spawner somewhere else.
3: How do I make mobs that will spawn in the daylight?
I'd recommend putting the spawner you created into an area where it's dark enough for them to spawn, then the hero of your map can take out the spawner. Or you can put the mob spawner underground and have them spawn on the surface, but I'm not sure it'll work.
4: How do I change the overall behavior of the mobs?
It depends on what you mean, if you want the mobs to be on your side or something it's impossible.
However, if you want a mob to follow a certain path or get them to get from point A to point B, than thats possible. First you can use a villager to create a spot where the mob will move towards, that is the easiest way to go about doing it. The harder way is to build a railroad underneath the area where you want the mob to move, then make a pig go into the minecart you place on that railroad. Attach a lead to the zombie(who is on the area above) Than have the minecart move and the zombie will move with it!

I took a zombie spawner as a test and encased it in obsidian and set the time to night. Shortly afterward, sure enough, a couple zombies spawned. But when I set the time to day, nothing would spawn. I don't understand why.
I probably should have been more specific. For my map, I want zombies to be able to jump over fences, like spiders can. How can I change this? And I wanted some zombies to be able to move faster than others, but I found out I can do that with NBTedit.

Okay, I'm not sure you can make zombies jump over fences (Unless you can use slabs of some sort) But to have zombies run faster, there are several filters out there that can modify mob's potion effects, armor, villager job, ect.
You should get this filter(s) and use that to modify speed.
