To those saying that having saddles in dungeons encourage exploration, so would a lot of other things. Mojang could easily replace saddles with unique enchantment books, tools and equipment with unique attributes, or new decorative blocks, all things that would be in high demand, and the former two are even consumable, meaning that you'd have to keep exploring to keep using them.
To those who say horses are too good a mob to be accessible early in the game, an easier method to control them would be to change how you tame them. If you want them to be accessible only once you get to the nether, then make a new food item that uses nether quartz in the recipe and have you feed them that to tame them. Same thing if you want them gotten after the End, just add a new ore to that dimension or just use Endstone as the additive. Heck, you could even just use golden apples if you want them accessible early, but not immediately.
Also, making saddles craftable but making horses harder to tame would give more use to pigs as an early mount. They'd still need work, of course, but that's another matter entirely.

However, the game has evolved like it has since i first stated playing (1.2.x). Its time to accept the new content (horses and mob swarming) and what it entails. Saddles should never be made with endstone. I know this game is not Real but in Real Life horse saddles actually used to contain (some still do) wood as the base hull and cotton (wool) can be substituted.. Mostly been replaced with plastic nowadays. I think the crafting recipe should contain leather, iron, 1 plank or wood to represent the hull plus 1 wool for padding...

The Mojang team can't tailor the game just for everyone specifically. If the person is sitting there thinking: WTF why can't I craft a saddle in my own game that doesn't affect anyone elses? then they are forgetting that adding something like that affects everyone, if saddles were craftable I wouldn't go looking for them in dungeons or other structures.

That makes no sense, even minecraft does keep a bit of sense in itself for crafting recipes, gold for conductive rails makes sense since gold is a very good conductor, but there is no reason to put obsidian or endstone in a crafting recipe for saddles. Putting saddles in dungeons makes it a early-mid game item that encourages exploration.

Some people who are adamant about wanting to dungeon dredge for them would and still could by their morals do just that. if its a challenge to go find one, then its still a challenge to go find them. Nothing changes for them. they are still in those areas waiting to be found. There is still a reward at the end of the tunnel. What you said is true, I must admit, but if there was a crafting recipe it would be way to easy to obtain, assuming that the recipe is made of iron and leather. Quests to unlock a recipe would cause so much debate and outrage in the community. Iron and Leather can both be found within 5 minutes of playing a new world. I'd only support having a recipe for them unless it had something which was hard to obtain within the recipe, such as a diamond, obsidian, etc idk. But then people say ZOMG THAT DOESN'T MAKE SENSE WTF THERE'S NO DIAMOND IN THE RECIPE, [insert other argument about said item in the recipe not making sense.
It's really impossible to make everyone happy regarding this issue.
I don't think going on a quest to unlock recipes would be all that controversial.... certainly not the way you are saying it is right now. Dinnerbone and Jeb have already stated that they are going to be adding a whole bunch of new structures into the game like the Jungle and Desert Temples. They've already added stuff like command blocks, so I wouldn't think it would be over the top to put in objectives like finding a certain generated structure with possibly a new kind of NPC in that structure that you must deliver something.... like a rare kind of gem (finally a use for rubies) or perhaps a "brewing" ingredient for some wizard in a stone tower or underground fortress.
Adding features to a command block to lock or unlock recipes (aka make them usable on a crafting bench) might even be something many map makers might want to use.
Regardless, I'm pointing out that there are other options which could make it possible for players to craft saddles, but would still require some sort of effort beyond simply getting a couple pieces of leather and some iron bars. It was brought up earlier that the point was to get players out of their comfort zone... something the new change that Dinnerbone is implementing to make mobs grow more dangerous when you are in one spot for an extended period of time certainly seems to be suggesting they are going to be doing. I even support that notion as players shouldn't hole up in a mountain base and then spend the rest of their time just grinding away on a cobblestone generator and avoiding mobs... yet obtain all content.
Defending having saddles in randomly placed chests simply doesn't achieve that objective of getting players out of their comfort zone, and really isn't all that fun either.
I'd agree that almost every possible change will make some people angry. There are still people upset with how beaches were removed from the world generator... and then upset with how they were added back in. I'm just asking for some logic in terms of how the saddles are used in the game and some logic for how players end up obtaining that item. Neither having the saddles in a chest nor for that matter having villagers occasionally sell them makes much sense.
Actually the easiest solution would be to make a button in the game to turn on and off saddle crafting. Everyone would and could be happy then. The button would be like the ones in world options like the "cheats on/off" or the "bonus chest" button. Or maybe add a "saddle" option to the preset selection. AKA 2;2x7,200x1,3:2;1;saddle (and village, ect., ect. or not) I think you get the idea.
Not everyone would be happy. Some people will see that little button another annoyance when creating a world. Plus, it only affects survival/hardcore worlds, not creative.

Adding quests into survival to unlock crafting recipes would upset the community because it would make minecraft survival seem like an rpg.
At this point I think being able to craft saddles if it was balanced is plausible but unlikely to ever happen in reality.
I'd like to point out however on what should happen to melon seeds because melon slices are an important brewing ingredient.
At this point who cares if it has RPG elements or primitive Blunderbusses or XP or whatever. The common dismissive attitude would be that the people who don't like X can simply mod it. Tho I don't really feel that unlocking recipes is the way to go with so few recipes in the game. Yes I said few. Unless they are going to get into some seriously exotic crafting. I do think that the whole crafting system needs to be torn down and reassessed. Its largest fault being that you can craft anything from the start of the game with one magical workbench. Meaning that there is no real progression save for calling for rarer and rarer ingredients. When that fails the crutch seems to be throw everything into an RNG loot table.

Personally I can't wait for the API to be done since the only two things that have kept me from modding have been that. As I have been finding it boring and the execution/implementation of new features rather hamfisted. Don't get me wrong I still love Minecraft to death and all.

I've been reading lots of posts related to gameplay mechanics on how flawed it is or how good it is.... that's really just conflicting because people say different things and those that have spoken about it in great detail are hard to disagree with so I can't really say much there. What a balanced craftable saddle would be imo is something along the lines of
* Requiring items that you can't get from the beginning (like diamonds, obsidian, etc.) or/and making the recipe demanding of resources (as in not a simple recipe)
* Nerfing durability so it's not infinite like a regular saddle.
I guess IT depends on what you think endgame is? I read all kinds of comments on this elsewhere. endgame could be neither fortress to name just one. it would also depend on how you went about playing your game. its possible to jump areas or parts of the game.

The occasional rare chest loot or zombies that hoard on say the new moon would be kinda interesting. it is that things are just being implemented so haphazardly and with such inconstancy.

I have religiously played Vanilla and I honestly never thought I would be to this point but I want the API out so bad right now and my friends have started to ask me to get mods up on the server I have been maintaining for them. Which makes me cringe like you would not believe.

Because there will be a zombie hoard and the villagers will open their doors at exactly X time regardless of what 15+ flesh eating monsters are still on the other side. Guaranteed. Who knows maybe a villager AI update is in the works.

In creative mode you don't need to craft saddles. because you can just grab whatever you need. besides creative mode is for building not any kind of game playing.

At this point who cares if it has RPG elements or primitive Blunderbusses or XP or whatever. The common dismissive attitude would be that the people who don't like X can simply mod it. Tho I don't really feel that unlocking recipes is the way to go with so few recipes in the game. Yes I said few. Unless they are going to get into some seriously exotic crafting. I do think that the whole crafting system needs to be torn down and reassessed. Its largest fault being that you can craft anything from the start of the game with one magical workbench. Meaning that there is no real progression save for calling for rarer and rarer ingredients. When that fails the crutch seems to be throw everything into an RNG loot table.
Which leads to this, I'm guessing by balanced you mean needs Dragon teeth and Wither bones....... I apologize in advance but it seems more often than not when someone says something like that their idea of "balanced" seems to be something along the lines of so punishingly impractical it isn't funny.
Personally I can't wait for the API to be done since the only two things that have kept me from modding have been that. It is slightly more complicated than I would like at present and every other time the game updates every other mod breaks and you are stuck in limbo. Once those issues have been largely minimized I plan on modding the ever loving hell out of Minecraft. As I have been finding it boring and the execution/implementation of new features rather hamfisted. Don't get me wrong I still love Minecraft to death and all.
Side note, not sure I have heard anything one way or the other about melon seeds but do tell.

I've been reading lots of posts related to gameplay mechanics on how flawed it is or how good it is.... that's really just conflicting because people say different things and those that have spoken about it in great detail are hard to disagree with so I can't really say much there. That's partly the reason why I wanted a Minecraft dev to post what they honestly think about all of this. :/

The problem with this is that X can be replaced with about anything.
don't like that diamonds are so hard to get
don't like that minecraft is so blocky
don't like that there are no airplanes and nukes
don't like that xp spawners exist.

I'm sure you've probably been to suggestions thread and found that somethings shouldn't be changed or implemented. It's hard because you can't please everyone no matter. Even something that may seem like a small change or might not impact gameplay as much might spark the community into arguing/debating about it.

What a balanced craftable saddle would be imo is something along the lines of
* Requiring items that you can't get from the beginning (like diamonds, obsidian, etc.) or/and making the recipe demanding of resources (as in not a simple recipe)
* Nerfing durability so it's not infinite like a regular saddle.

In all seriousness tho I really wouldn't mind if melons occurred outside of chests. Course I am also for dedicated/naturally occurring apple trees and berry bushes. Possibly with accompanying pie recipes but I digress.
Chests for me have always been a just a little perk, nothing that drove or shaped my game. Similarly to villager trading, I want to do it if I want to do it not because its being forced on me. Especially with how annoying zombies are now even in normal you have to exploit the game mechanics* or the first village you find is going to be all but wiped out the first night.
People want some sort of natural progression and challenge. Which is is awesome I am 100% for that. My major issue is that RNG is not natural progression, it is taking the laziest possible out. Cranking up the detection range on zombies to some ludicrous number isn't challenging its just really really annoying. It isn't that the ideas that Mojang has are bad. The occasional rare chest loot or zombies that hoard on say the new moon would be kinda interesting. it is that things are just being implemented so haphazardly and with such inconstancy.
When what we need are more crafting stations, tech trees and new mobs**.
I have religiously played Vanilla and I honestly never thought I would be to this point but I want the API out so bad right now and my friends have started to ask me to get mods up on the server I have been maintaining for them. Which makes me cringe like you would not believe.
*get all the villagers inside a building and block the entrance with a cube of something. Because there will be a zombie hoard and the villagers will open their doors at exactly X time regardless of what 15+ flesh eating monsters are still on the other side. Guaranteed. Who knows maybe a villager AI update is in the works.
**actually thinking about scripting a new neutral/hostile daytime mob that starts spawning naturally after the first day or lunar cycle. Sadly my java is sooo rusty and I have next to no clue how to go about rendering or texturing said mob.
What about the people that want to play survival in singleplayer? And what about the people who don't want to open a server just so they can have their admin shop. And don't tell me about the mods that have allow you to have your saddles'n'stuff. I think a crafting recipe should be added, and like you said, people like you can just stick to raiding.

I digress my counter arguments and/or solutions are plausible. If you cant at least entertain the idea that they could be then what else can i say. If you don't get it, then you don't get it. I don't care if Mojang never sees the forum. Truth is they should take a look from times to time. They might learn a few things. There is another thread where the polls say counter to what you claim. You cant take the value of this poll without taking into the other threads poll. Your comment is biased. i for one didn't vote on this poll because it is biased. it should be more like the one on the other thread, "yes" "no" and "dont care". in this way its not about game play or motives.
Also i did apologize to Winter_Mage and explained what i meant. I can see why you would think of me the way you do. but it is in error on your behalf. No worries.
OK, and that would be a little later in the game than I would like to have a saddle, without crafting. Hence why i been saying what i have suggested.
In creative mode you don't need to craft saddles. because you can just grab whatever you need. besides creative mode is for building not any kind of game playing.
