Title itself is self-explanatory. Are you a hoarder? Or do you take what you need then leave?
I myself am a hoarder. I go for dangerous glowstone, hell I take all cacti in one desert! I end up caving for 2-4 hrs end up with 10 stacks of iron ore. I just can't get enough things in minecraft.
In singleplayer I mass mine everything, one of my favorite things to do is make a mountain dissapear and I keep everything from it, but in multiplayer I don't hold onto anything I usally sell it right away.
I'm the person who brings a chest mining with him so he can store things to make room and come back for it later...Because I don't wanna get rid of dirt...
What about the dead shrubs do you harvest them? Can't call yourself a hoarder unless the grab everything. I usually get 4 or 5 stacks of dead shrubs per desert along with 8 or 9 stacks of cacti.

I hoard EVERYTHING I find. I'm always carrying shears for leaves, dead shrubs, and tall grass once I'm in the right posistion to do so. I have a double chest filled with those things, and I'm always wondering "Do I need these?"
That, and the one thing I hate hoarding would be Rotten flesh. I have an entire area of my storage dedicated to the stuff. I never use it, seeing as my dogs never get hurt.
Don't get me started on gold.

I definitely am. The worst part is that I'm not organized about it. So in one chest I have 20 iron blocks and sstring and all kinds of assorted thing and in another it's the same story! xD

I really try not to hoard a bunch of useless stuff or stuff I'll never use. What I keep realizing is that I actually use 90% of the stuff I find! I used to be like "I don't need these 4 stacks of dirt." then 20 minutes later I'm building something and I say "Damn, wish I had some more dirt..."
When I'm mining, I'll take just about everything I see but I skip a lot of coal. Also, when I have a chest in a cave somewhere, if my inventory is full when I'm leaving, I'll leave the spider eyes, string, zombie flesh, and extra stacks of dirt behind, but I'll rarely just throw them on the ground.
I tend to hoard anything useful instead of turning them into something useful. I have several stacks of iron blocks but I run around in no armor and a stone sword. My only diamond tools are pickaxes because I need those for obsidian. I have a chest full of food but I play on peaceful so I don't have to eat any of it. My house is just full of chests because I just collect more and more stuff without getting rid of anything. When I build houses I make them huge just for more storage. Though if something is easily obtainable like snow or wood I am more willing to use it. I do keep my stuff organized so I do have that going for me.

(Make a snow man somewhere it cant move, and dig the snow under him with a shovel = unlimited snow)

Well it sounds like we have a winner with you my friend! Now that is extreme hoarding!
But I too am guilty as accused! I NEVER just get rid of things (except the occasional odd number of gravel that is preventing me any more room to carry stuff). I tend to use everything tho, so I dont often find myself wishing I could still have X item I just dumped.
And one of the other posters was right for sure - this game lends itself to hoarding!
