So with the whole terrain being boring, I've found I have to travel a bit before I find cool area's to build...
Well on the server I am currently playing I was looking for a sweet spot to build, I found an ocean biome, I traveled across it and on the other side I found a sweet mountains/jungle biome that was HUGE, and it was perfect!... Well after building there for a day or two I decided I needed some ender pearls, so I thought I would head to the end... Only to realize that I am now 5k away from 0,0... and any hope of finding stronghold close to my location was gone.
So I guess I am asking...can you move end portals? if I were to dig one up or something?
And if that is not possible, here is my plee to Jeb.. please add more then 3 strongholds into the game, and/or please make better terrain.

Build a Nether portal at your current location. In the Nether build a road from your portal to your spawn point and build another portal at your spawn point.
In the Nether each block you travel is the equivalent of eight bocks in the overworld. 5000 blocks divided by 8 = 625 so your road in the Nether will be around 625 blocks long.

You mentioned you have to travel a long way. If it takes you 32 minutes to walk somewhere in the overworld you can walk the same distance in 4 minutes in the Nether.
When you find the End portal build a Nether portal near it.
You can build a 4000 block road in the overworld or road that is around 625 blocks in the Nether. You will be able to walk from your current location to your spawn point or an End portal in a few minutes.
For the Ghast problem build a roof over the road and some walls if needed. Bring coblestone or something with you and don't use wood.
You mentioned you have to travel a long way. If it takes you 32 minutes to walk somewhere in the overworld you can walk the same distance in 4 minutes in the Nether.

Not exactly - The terrain on both the overworld and the nether isn't flat, obviously - But it'll get you as close as it can, so it will be pretty accurate.
If you're going to build the nether shortcut, I'd recommend adding a rail line too in order to shorten the length of your trip back and forth even more. Rail lines are rescource intensive, but once you're finished it's very satisfying to finally put it to use!
