I always:
*Keep my tools in an exact spot in my inventory or it bothers me (Not just hotbar, the entire inventory)
*Have to have an extreme amount of food before I feel save
*Have my house perfect inside and out or I re-do it
*I NEVER break leaf blocks with an ax; if I do, I rage a bit.
*Have to have a chicken in my house for the first 10-300 days (Don't ask why. I don't know.)
*Get bothered by not having cats/dogs
*LIKE getting shot by skeles, so long as I wear iron+ armor.
EDIT: I also build graves for any dead pet. I had a whole graveyard on a hill....it was despressing...

Every time one of my animals (I have Mo creatures installed as well), I build a grave for them. Cobblestone with a torch on top, sign on the side listing what type and the death date and cause. I put one of each type of flower in front of the cobblestone, and underneath is a chest that holds bones, rotten flesh, leather, (and if it was a horse or an ostrich), its saddle as well.
I have a mausoleum sort of thing.(I also build a small monument where they die, and if it's a creeper explosion, I don't cover it up.) It's kind of depressing, it's very easy to get attached to the little virtual things.
My sister and I have a really bad tendency to misspell stuff in the chat, so much so that in IRL conversation, we change it to match misspellings. Examples:
Creeper=Crepper, Pig=Ppuig, Pickaxe=Pickaze, or just aze, iron=URINE, not kidding, and cows are c-wows.
I make iron golems. As in, plural. The village I'm in right now has three golems in it even though it has a wall around it. Although I must admit it was worth it seeing them team up to kill an enderman.
Iron Golems are so fun though, especially in fight mode.
Well, my 7 year old brother says; "If I say diamonds are kings, and lava is frrance, I could say THROW A KING IN FRAAAAAAAAAANCE!!!!!!!!" Then he throws all his diamonds in "France".
If I'm making boats and I end up with an odd number of planks left I will always put one plank in a chest because you can't really do anything with that last odd one. And I won't throw it away either, I save it for the next time it happens. :3
That sometimes happens to me when using sticks to make swords. Always an odd number / one left over.
And the rest of these are quite interesting as well
ALL rooms and buildings MUST have odd number sides so I can have 1 door in the middle. The door needs to be placed on the outside so it swings in. The door is also not allowed to be left open. Even if I'm in the house.
Windows must be symmetrical on all sides of the house.
If I have a chest that has multiple building blocks (e.g. cobble, dirt etc.) in it, they must be arranged like this: Not like this:

If I have spare picks they go in my inventory above the slot where my pick is on my hotbar. Same goes with swords and other tools. Hoes are never in my inventory when I'm not farming.
If I begin to cut down a tree, I must cut it down completely. I always leave the big trees because of hidden wood that I don't see which makes it a floating tree.
Skylights must be symmetrical.
The ground I'm building on must be level and all tall grass gone.
Creeper craters and 1x1x1 holes MUST be fixed instantly.
All redstone has to be hidden (with the exception of building in my Creative Flatland world).
Houses have to be all one type of block (Corners and roof don't count).
Farmland must have seeds in at all times
Signs must have correct spelling and words centered.
All stacks of blocks must have 64 blocks.
I could go on for a lot longer but can't be bothered.
Whenever I start my world. I always start off with a certain type of small house for at least the first two houses. No matter how my world spawns. I even ended up making one even though I had spawned next to a village. No idea why...

Dude. I have like three big chests full.
I always put my crafting table, ovens and chests in the floor. (so the tops of them are flush with the floor) The chests I place trap doors over the top of them.
After mining out any ore, I absolutely have to fill in the empty space with any type of block. If I do not have any blocks in my inventory at that point in time, I'll just mine out any blocks nearby just to fill it in.

Yes that too! I'll always make torches with odd sticks or if it's only a few sticks I'll make the rest torches.

Eventually I'll just build a iron house or something.
