I'd say that it's completely because they're immature. There's no good, mature reason why anyone should grief. You can act like you're a vigilante but in reality, you're just some kid who's too immature to decide you don't like the server and walk away. It's true that Minecraft is just a game but the effort people put into it is usually real. Making someone clean up your mess, in a game or reality, is just an immature -ish thing to do, no matter how you try to justify it.
I could say the same with an immature person running a server.
That's why I think they greif. Their building skill is probably one of the worst on the server, so, if everyone else's builds are worse than his, then he would be the best!

I once griefed under an alias in a hardcore pvp server, I called myself "maelstrom" and flooded houses, I left signs which said things like "Maelstrom has found you"
"You are not safe"
"You have never been safe"
"Maelstrom will always find you"

Griefers grief cuz of the adrenaline and the addiction. I remember the first time i went griefing, it was back in the good old minecraft days when a lot of people were noobs at the game. I felt like a badass, after that I wanted to do it some more and I couldn't stop. It was to fun to stop. I don't do it cuz of jealousy, being bullied, bored, being mean (bullying), I don't do it for none of that crap, its just a habit. If I see a house I like that isn't protected, rich looking, took no time in making, used creative, then its going down. I don't like seeing structures that had free materials given to the person by an admin to build them. They act like rich kids. I respect players that take time to gather their materials that aren't given stuff to them, that have a basic house. I grief to help people, and by helping i mean giving poor people the stuff I take. If you hate griefers and cry about it, thinking we are retards or do it to bully people in game and in real life like some people say we are, then you need to quit your cyber life and stop playing minecraft. Minecraft, anti-grief plugins are the closest thing to stopping griefers. I really don't consider griefing as bullying, and I wouldn't take it too far. The real retards that bully people are the kids that make them suicide, they deserve to get bullied. I do have a life how do you think im playing minecraft? I would never bully someone in real life or in game. I would grief them though.

3:Social status. The griefers of Minecraft may not be known to be popular, or praised for being prosperous, but they simply want to fit in. Just the way overweight or obese individuals want to be slender, just because they want a place in the community. Imagine being shunned and not knowing why, for most of your life or career.
4:Fear. A great reason that may be a factor for all these other reasons. They are scared of being cornered by zombies without weapons, or without a safe home and prosperity, or without having people look up to them, or even just be treated like the others, or in fear of the law.

8.to get non-staff/non plugin servers with stupid owners scared
9.because they are trying to get noticed

There's a whole bunch of different reasons for griefing
-The griefer is bored
- the griefer is sick of being in adventure mode (I can relate)
-The admins are jerks and the griefer sees himself on the side of justice
-the griefer has a bone to pick with his victim
-The griefer thinks griefing is cool/fun
-the griefer is ticked off at someone in game or IRL (totally accidentally italics)
-Or, as someone once said, "Some men just want to watch the world burn"
Quite logically, it's "fun" because they love destruction, and they laugh how people begin to pout over it. If you want griefers to not grief you, just act calm when they do something frustrating. They live off your anger, like trolls.
