What do you mean delete? Do you mean mine it and get it so you can place it? Or do you mean remove it from the game?

To remove a placed block, hold down the left mouse button while your crosshair is aimed at it. You will need to get close to the block to break it. Some blocks are sufficent for hand removal, but many will require a special tool to remove them and extract the resource. You should just read the Minecraft Wiki for more info.
Or, if you want to just get rid of an item, press "q" to drop it on the floor. It will disappear after 5 minutes.

Looks like I wasn't as clear as I should have been. I want to delete the block from the game so I don't have to deal with it. It's the weeds, I get thousands of them and I don't want to spend forever getting rid of them all manually.

Not sure if this would work, but mcedit or worldedit might help you out.
You could make the textures for them invisible, but they would still be there. You can always use a water bucket, which will remove a large number of tall grass on a flat surface.
There used to be mods to get rid of the grass, but none of them are updated.
I was just thinking since mods like IC2 can add blocks that you would be able to delete them too.
From an existing world? No, not exactly. Creating a new block is easy. The problem with deleting existing blocks is that simply removing the info from a block ID doesn't actually remove them from the world. If you deleted the ID for grass, the game wouldn't remove all the grass blocks from your world, it would simply no longer know what they are supposed to be.
Without a mod that will actually actively strip all grass blocks from a save file, they aren't going to go away.
As someone else suggested, look into the MCedit program. It may have a feature or command that will remove all of a specific block type from a large area (though I don't recall ever seeing that).
Well, you can backdate your minecraft to Beta 1.5, but you won't get the new features... or whatever the above people said.
