Ok, so for the sake of finding some middle ground, you and I both agree that mods ARE a solution. We are just debating the length/ time, as opposed to when you joined in with my question to the op, and said that mods are NOT the solution.
We can both therefore agree that if the op wants a solution to his problem, though it may be temporary, he COULD use a mod.
Because, until you started debating things with me, that's all I asked of the OP.
"Why not (use a mod to solve the problem)"
His answer was.

And since then it is you and I who have been debating, duration, apparently.
The fact remains, IF he wants a solution, there is one, right now, for now.
Yes, if he really wanted to, he could install a mod (or go on a server with the right plugin) for more difficulty. This thread is about vanilla Minecraft, but it doesn't make mods any less (or more) of a solution.

I don't think Minecraft was EVER actually hard. Except for part of the indev-infdev dev cycle. Though that was mostly because there was no spawning restrictions for hostile mobs, so you would have to engage in a life or death battle every time you went to get wood.
I think that the new evolution of minecraft gamers are all experts because they know all the secrets of minecraft from their nerdy friend already obsessed with minecraft and now they know alot of things about defending against creepers and other hostile mobs in minecraft and they think its too easy and not fun because they think the main objective is to survive mobs.Wrong. It has become easier, yes, but only certain things. Others have been harder. It is now impossible to melee kill a skeleton while you are in water. Go ahead try. Creepers can now kamikaze you from above. Zombie can now light you on fire. Zombies and skeletons now spawn in enchanted armor and weapons. Bonemeal no longer the miracle growth formula. Since the difficulty levels only change how much damage mobs deal, it doesn't do anything if you can dodge the attacks. And, if you can't, armor is overpowered anyway and will reduce the increased damage to nil regardless.
2) Before you say "but you can impose challenges on yourself", most of these self imposed challenges require you to ignore a mechanic you probably like. I want to wear armor because I like the sense of progression wearing it gives me, but it also reduces challenge, which I also like. Why should I have to choose?
It has become easier, yes, but only certain things. Read: the combat system (sprinting which allows you to run away from every non-boss fight, and enchanting for dealing extra damage that's quite frankly just overkill) and protecting from more damage that no mob besides pigzombies deal, and that's just an unintentional side effect), obtaining food (melons and carrots), and just survival in general with the introduction of less punishing bed mechanics and structures that pose no challenge after the first encounter (both temples) or at all (villages).
Others have been harder.
It is now impossible to melee kill a skeleton while you are in water. Go ahead try. Such a situation will rarely occur, and chances are A) you can just walk away since it's slower than you or B.) use a bow.

I have been playing Minecraft since 1.8. Granted, that is not nearly as long as other people, but I consider myself an experienced player with a good grasp on how to survive. I still die. A lot. On hard mode, Minecraft can get the best of even the most skilled players because there are many ways to die. When starting out, mobs can really be a challenge without armor. Once you have iron armor, mobs aren't that big of a deal, but I have still died from them, as well as fall damage, hunger, and despite being taught to not do this from the beginning, digging down and falling into lava. But maybe I'm just a derp.

Yeah, it's opinionated, but there are at least a sizable amount of players who think that hard isn't hard enough. And, really, it isn't, because it only buffs one small portion of the game and a few tidbits more when changing the difficulty.
Hence why Normal and Hard need to be made harder. Easy is good as-is because it's exactly what it says it is.

I fail to see how a "sandbox game" implies low difficulty. It's a genre, and the genre doesn't necessarily mean that you build in games of said genre. A sandbox game is just a game without (or very few) objectives, requirements, restraints, et cetera. None of these imply or signify low difficulty.

I can agree completely, I think that when you play a survival game you should atleast feel like you're against a challenge.
I feel that there is some need for an "Hardcore" mode, but not the existing one :
A hardcore mode where it is harder to find ore, wood and other things you need
Or just add a little more time to when you harvest ores and wood for some more time consuming survival so that you'll need to find better tools in order to surive not just for the ease.
I would like to see a new 'hardcore' mode....but time consuming survival doesn't make it harder at all. It just makes it annoying. In my OP, I would like to see harder terrain to travel on, special mobs that actually try to kill you, and maybe raising the enchantment level back to 50. (Because 30 xp can be gathered fairly quickly if you know what your doing.)
Go ahead and dig down 3 blocks, place a block above you and stick down a torch. Then sit there. Go ahead, keep on sitting. No, no, you're winning the game! Don't move! You're bored? How can you be bored? You're pwning teh game! You want to go exploring and fight monsters and go to the Nether and the End? Ridiculous! You're just fine sitting in a hole! Now you're getting out? You're going to go out there? Why would you stop winning the game? WHY?

Sitting in a hole is not "pwning" the game. Minecraft shouldn't be hardcore survival, it it was then nobody would get the chance to build anything, they would stick to a cobblestone house trying to defend it. If that's what you like go play hardcore.
