Basically, a lot of hunter-type spiders (as opposed to scavenger ones) are nocturnal; that is, the majority of their hunting occurs at night. come daytime, they return to their home or hide themselves away somewhere.
Notch was well aware of this when he changed spiders behaviour (WAAAAAY back) to make them "nocturnal" as well. This means that in a dark place or at night, they'll be aggressive because they're actively hunting, whereas in daytime, they'll become passive unless provoked. It should also be noted that if a spider sees you while its in a cave, and chases you out into the sunlight, it will not suddenly become passive unless it suffers fall damage. (I mean, Notch or Jeb really ought to make them climb down as well as up, but anyway). The spiders in Minecraft are based off real-life jumping spiders, of which a few species are nocturnal. It is simply an element of realism.
Spiders have never burnt in sunlight, Notch made them be peaceful at day since Survival Test.

Also, They're nocturnal predators... They're too busy lazing around to hunt at night, And the sun hurts their eyes so they're actually staggering about in search of shade.
