In favor of chicken:
- they drop chicken meat
- their spawn eggs say chicken
- they only fly short distances
In favor of duck:
- they have wide bills and no apparent tails
- they appear to have webbed feet
- they swim
- their feathers are useful for arrow fletching
Ambiguous:
- there's that question on the load screen
- they make a noise that doesn't really sound like either one
So I call them duckens. The swimming and wide bill would be enough to push them into the "duck" category except that they drop chicken meat. Even the feather thing isn't quite enough to overcome the drops. But I can't call something that swims a chicken, either. Duckens works.
A world where pigs reproduce instantly when you give them grass and monsters appear out of thin air, creep over to you, and explode, is obviously not reproducing reality. If the Minecraft world can have zombies and creepers, it can have duckens.
It looks more like a duck than a chicken. It sounds like a chicken. Even a menu-screen blurb questions which one it is. But officially, I guess it's a chicken. Doesn't really matter, does it?
Anyway, it's definitely a chicken. Otherwise you wouldn't be able to enclose it in fences or the like.
You can enclose ducks. I saw at a zoo they had ducks....because that's the animal people go to the zoo to see. They let the squire exhibit run free though
How do you even get a signature. Anyway
And you just confessed over the Internet...
Case closed.

Aflac!
Best answer I saw though is food.
Which leads to another question
Why can't I have Lamb in minecraft?
Okay it does look like a duck but the game says chicken so...
That was too punny for it's own good.
