I've been obsessed with the Guinness Book of World Records (I have seven of them, between 2006-2012). I was mining one day when I came across a vein of 19 iron. After mining it all out, I thought 'Hey, what if we could all compile a list of Minecraft records?'
So, I've spent some time to compile a basic list of records which can be broken by anybody (as long as the submission follows the rules). At the time that I started this thread, no records were filled, and were free to be set by any player. Noticing that no records were filled, I decided to put some in, seeing that the thread was basically empty, devoid of anything interesting to read about (the records, that is). The following paragraph explains the rules for each submission:
Guidelines to MBWR (Minecraft Book of World Records):
The following programs/methods may not be used to gain records (unless otherwise noted): Mods, Optifine (or any FPS boosting mod to get the record for highest FPS) WorldEdit, MCEdit, INVedit, NBTedit, any other world/inventory editing program, experience editing program, enchantment editing program. This rule will be revised many times if more cheating programs are found. Creative Mode can be used to gain some records which I will not bother listing.
All submissions must have picture proof or video proof. Otherwise, I cannot confirm that the submission is legit. Any structures, like conjoined dungeons/NPC Villages/pumpkin patches, etc. need the seed and the version number. This is not needed for ore veins.
Concerning 'largest veins of X': Silk Touch may not be used to gather ores and clump them in one place. Conjoined veins are allowed, as long as each block is horizontally/vertically adjacent to each other. No picture is needed, but it is necessary. Therefore, if someone says they find 23 iron ore in one vein, but provides no picture, and another person says they found 21 iron ore and has picture proof, the record is given to the person with picture proof (because there is no way to confirm that the user found 23 iron ore).
IGN is optional if you wish to be credited by your Minecraft name, but you don't need to since you have a username on the Minecraft Forums.
Structures in NPC Villages include: Forges, houses, crops and lookout towers. This does not include lampposts or gravel roads.
These rules will be revised repeatedly. Any loopholes in the rules will be removed when the rules are revised.
And now, a list of records that can be broken by anybody, as long as the guidelines are followed:
LARGEST ORE VEINS:
Largest coal vein: 184 by Minecraft Forums user lark774
Largest iron vein: 45 by Minecraft Forums user Micoolman
Largest redstone vein: 211 dust dropped from one vein by Minecraft Forums user IM-REGALMACHINE1818. Assuming that 4.5 dust will drop on average, I estimate the vein had 47 redstone ore.
Largest lapis lazuli vein:
Largest diamond vein: 20 by Minecraft Forums user BlockCat
Largest gold vein: 12 by Minecraft Forums user The Enderman Slayer (I found 12 as well)
Largest glowstone vein:

That probably won't be a good record. If Minecraft can load worlds up to 13 million blocks in either direction, then there would be thousands of villages.

The_Alex_: Veins can merge together and form a bigger vein. I once read of a player who managed to obtain 147 coal from a triple-merged vein. With diamonds, seeing as they can come in veins of 8 and only appear as one vein per chunk, the biggest possible diamond vein can yield thirty-two diamonds (The chances of getting this would be extremely slim).
They can't be records cause they are not randomly generated, I.e the coal in a vein is I think 8 and therefore nobody can beat 8
Also anything based of chance shouldn't be a record, only things that take an amount of skill or time should, like your rube Goldberg machine that would be a good record (furthest rube Goldberg or most intricate etc)

I've had over 63 blocks of coal in one vein, there usually more than 8 in every vein.
Another record (Would have to be proven by video) would be quickest time to find Diamond from the time being spawned. My record so far is 11 minutes and 28 seconds (but I have no proof, just the world with the time on it ;P)

That video is fake. -.- Look at 0:13 and you'll see he switches the world to a pre-generated one just when it finishes generating. I suggest removing it.
I don't remember, but there is and extremely large village, the size of about New York. I forgot what the seed is, and I take no credit. Try searching it on Google or YouTube?

That probably won't be a good record. If Minecraft can load worlds up to 13 million blocks in either direction, then there would be thousands of villages.

I have personally seen 19 melons in a patch but its possible to have 20.
Edit: problem with this is the "records" are the games max cap on stuff, which makes it kinda impossible?
