Wooden Axes, Shovels, and Swords. I don't remember the last time I used any of those three. It's so easy to just skip them and get stone, or even iron.

You use clay balls to make clay blocks or make into bricks for decoration, therefore has a use. Usually when you build something you, uh, don't destroy it.
i would say the most useless item in minecraft is leaves i mean what can you do with leaves?!also one of the most useless items is bedrock you cant collect it in survival and you cant do anything with it in survival

If you are creative, you can find a use for most anything in Minecraft. And by 'use', I mean that you can use it to accomplish a purpose. Saying "omg gold is soo useless" is false because gold has several legitimate uses, like making delicious golden apples, clocks, and powered rails, all of which are quite useful. Would you make armor and weapons and tools out of gold in real life? Of course not. But do people still value it? Yes, they do. It is beautiful, rare, and often used for currency and jewelry.
Gravel has uses as well. Flint, for one, which we all agree is useful. Other than that, it is a cheap and expendable emergency block. Of course you can use sand for most of the things you can do with gravel, but I appreciate that Minecraft has variation. Would you like it if Minecraft was minimalistic, containing only blocks and items that were important? I wouldn't.
As for dead bushes, I put one in a flower pot in my alchemy lab as decoration, as well as a fern.
Consider that Minecraft is essentially a game, and a creativity toy, and a means to have fun, and you can find a use for anything.
Bedrock since you techincally can't mine it or use it directly. The only way to get use out of it is by dumb luck you get a formation that lets you make something like a cobble generator or something.
Gold tools and armour may be useless but gold can be used to make golden apples, watches, redstone stuff and etc.
