Flying in Survival mode?

He could be allowing cheats, which would allow him to go into the creative game mode and double-tap space to fly, which would explain the flying part.

you can open the world to lan with cheats on, and then you can use /gamemode 1 for creative and /gamemode 0 to get back to survival.
