I got the Idea of making a GIANT list of different Minecraft Challenges, if you have a Challenge, list the title of the challenge and all of the rules in the comment section bellow. I've been looking for a reasonable challenge and have yet to find one. Making an Organized list in the comments could make other challenge goers lifes slightly easier.

"realistic" carrying capacity: Only 3 torchs/tools/foods can be carried at a time unless being moved a short distance (sword, shovel, pick, bucket, axe all count as tools).You may carry one ladder, after that each additional ladder counts as a tool. No blocks (except wool for tents) can be carried for any great distance. Anything else you can reasonably carry is ok (a fishing pole, bow, a few sticks, a book, a flint ect).
No creating safe buildings, you must be open to enemy attacks, this means a tent is OK as long as all mobs are able to get at you.
No building traps for mobs.
No mining or placing blocks to maneuver, that is what ladders are for. You may dig to maneuver but only with a shovel.
Try not to stay in one place for too long, wander the earth.
Have fun, should be a great new experience!
I just have not worked out decent rules for wood gathering yet. With these rules an axe is pointless because you only need a little wood for tools/benches/chests/boats every now and then, so just punch a tree down.
I wish saplings could be turned into sticks and sticks into wood planks. Then the rule would be no punching down trees unless you use an axe. This would make people decide to carry a sword and an axe (2 out of 3 tools) or just an axe (decent damage if iron).
For caves I recommend using a flint to make temporary light as you quickly walk deeper and deeper into the cave, placing a torch when you find an interesting place, this way you explore quickly without slowly creeping your 3 torches into the mine. Alternatively get the "HandHeld torches" mod once it is updated for beta.

It really is, it is basically the only way I play single player anymore.
It is alot of fun because when you die you just go back to wandering the world, often you will stumble upon one of your abandoned campsites. Maybe you left some useful resources you could not carry in a chest at that campsite, Some old leather armor, maybe some food, a couple tools and materials like iron or stone.
I once survived for long enough I was wearing mostly iron armor and managed to find a cave that went deep enough to get diamond. I was able to craft a diamond sword and helmet!
Right now the rule I use for gathering wood (because I cannot come up with a better rule) is that if I want to harvest wood and I do not have an axe the first amount of wood I get I have to use to make an axe before I gather any more wood. This way carrying an axe is actually a decent idea.
You could play "Hardcore mode" where when you or your friend dies you have to throw all of the stuff they had away.
Find a void (hole in the bedrock) and jump down it while holding 1 stack of diamonds, 1 stack of iron blocks, and 1 stack of gold as well as all your food and a full set of diamond tools.
Also:
"GET OF OF MAH LAWN!"
Kill a creeper with an iron hoe while the creeper is trampling crops.
And:
"TREE SIKSTIE NO SCOPE LADDAH SHOTZ!"
Perfom a 360 laddershot No-scope from a tree to kill a chicken with a bow. (Jump off tree, 360, fall onto side of ladder, shoot chicken with bow).
And who could forget:
"Hug a creeper"
Be killed by a creepers explosion while in direct contact with the creeper 100 TIMES!

Voids are patched... and the only reasonable one would be killing a Creeper with a hoe, but I love creepers, unless they go boom.
Go into the nether with weapons of your choice but no armor, and see how many zombie pigmen you can kill. Ghasts are optional. Keep striving for a higher number, until you are INDESTRUCTIBLE
The Lost Lumberjack:
Spawn one iron axe and one stack of wood then build a house and play by these rules and shop system
Rules:
No crafting items (Even planks for your house you must use the logs)
You can only obtain more items through the "shop"
No spawning items except if "shopping"
You can break or place any block you wish (except for wood you cannot harvest that)
You must play on normal or hard (Must play on hard if using Mo' Creatures mod)

Zombies=1 point per kill
Skeletons=2 points per kill

Creepers=2 points per kill

Mod mobs have no point value BUT some may drop items worth points
Ranged kills are worth 1/2 points
Other ways to get points

TO GET PONTS FROM ITEMS YOU MUST THROW THEM AWAY this means that if you choose to make a Nether Gate you don't get 120 points from the obsidian you need to make it.

Goal of the game?
The goal is to get full gold armor and gold tools then venture out and survive 3 nights with stopping in one spot and without breaking your armor or tools. Also you must not use any torches to help hold a spot at night. If playing SMP the first to complete this wins, and at day you may attack each other IF OUT OF HOMES to takes whateer they have on them. This means that players are worth 0 points but you can get some nice tools from them.
NOTE:This is meant just for a change in the game NOT as a huge improvement to it. it is recomended that you have Too Many Items in game invedit because it makes the shop easier to use. Feel free to mod and place values on modded items.

Aye, I wish this is how things worked in the regular game: tree trunks yielding wood only if chopped down with an axe, a sapling making 4 sticks, and 4 sticks making a wooden plank. Meaning that you'd have to work your way up from saplings --> sticks --> wooden planks --> crafting bench & axe. It would be more realistic and more challenging than tree punching.
You are the sole survivor of a plane crash. You wash up on the shore of this strange island, and don't know what to do. You must complete several tasks over the course of a few days or you will never survive.(if you die at any point you must restart with a new server and redo everything and it must be played on normal or higher) Here are the few limitations, wood planks can only be used for crafting which means no plank shelters or placing planks (same with stone). Tools can only be made of wood except pick axes (only wood and stone). no mining stone(dirt,sand and gravel are ok) unless it is for crafting. This means you can only go into caves to get materials. To make this realistic, you have to eat something at least once a day wether you have full health or not.
1.During your first day on the island, you have no idea how to survive or what to expect. You are unprepared for the onslaught of monsters waiting for you in the night. (this means that you will have to survive an entire night defending your self against the monster onslaught. You are unprepared which means no shelter and no weapons.)
2.When the day arises, and the monsters are all gone, you realize the severity of your situation. You will have to build a shelter and find some way to make a torch and a bed. as soon as that is done go to sleep and prepare for tomorrow. (shelter can only be made of logs and/or sandstone)
3.After a night of well needed sleep you have come up with several ideas of how to get out of this situation. Your first idea is to start a massive fire. There is no way anybody will miss that!
4. after the fire has died down, you realize nobody has seen your call for help. So what could be a better idea than a literal call for help? out of any material besides dirt you must construct a giant S.O.S. on the island. That sure to get noticed (wait 5 days for results. explore the island for a while.)
5.after such a long time without any results its time to take the next big step. Venture off the island with a boat to try and get back to civilization. (sail for an entire day and night without landing anywhere.)
6.After a long time at sea you find yourself on a strange shore. no one is living there. it's almost just like the island you crashed on. explore a little bit to see if you can find anything. (explore for a day or two)
7.once again you find nobody. You are growing tired and weak and realize there is one last thing you can do. You just happen to be a technician and are especially equipped in the field of radio waves. You will build a radio tower in an attempt to contact somebody.( a radio tower will be built with a small building with a lever and a button in it to control the radio signals. the top of the building will have a radio tower built out of glass as high as possible with two fence pieces on top of each other with a iron block at the very top. after a while you were able to pick up a signal! They will be coming to pick you up soon.
8.Before the rescuers arrive you must place a large marker that is lit up and easy for the rescuers to see in order to find you. You must stay at this place an entire night fighting off monsters until your rescuers arrive.
9.You have survived the night and have been rescued. enjoy this challenge if you dare except it.
