i want to breed up my villagers, so I want to just make a bunch of rooms with just doors for the walls, to help with the breeding process. Then after I've got plenty of new villagers I'll get rid of the rooms..BUT, will the villagers disappear, despawn if I get rid of the doors? Or will they just not make a new villager if one dies? Thanks!!

Hard work won't kill you, but why take the chance.
When you mean get rid of the doors, i assume you mean internal ones; if they are internal ones i.e with no "outside" as defined by the village mechanics, they wont help towards the villager breeding as they wont be classed as houses. You will have to have a glass block (or other transparent block, including air, but that means mobs could enter if they can get on the roof) directly above one side of each internal door, which allows daylight to reach the floor block on that side of each internal door, and thus will make it a valid house.
Yeah, I know. You can also have sunlight on both sides of the door in that 5 block zone either side - as long as the amounts of sunlight differ each side, it will still be classed as a house. I didnt want to expand my comment any further in case i had misinterpreted the OP.
My favorite generic villager breeding village (I've used minor variations in all kinds of biomes) is a central garden surrounded by doors, with roof slabs just outside the doors. The outer courtyard has a wall around it to keep zombies out. The villagers consider the inner garden to be "outside" and the outer courtyard to be "inside". So they all gather at night in the outer courtyard. I enter from below via a trap door in one corner, or through an iron door in one of the side walls so I can trade with the villagers.
One variation has the garden space in another ring outside the courtyard, and the center space has a water trap and lava pit for smelting iron golems.

I tried it with terrible results. I gave my wife my glasses for a second, a creeper showed up and now my wife is pregnant.

They will probably wander around aimlessly, so if they aren't fenced in they may well wander away from the village,

The door check looks at 5 blocks on either side of the door (skipping the block that the door stands on) not just the block right next to the door.
