Did you happen to open it in an older version of minecraft?
If you open a map that has been played in 1.8+ in an older version (say 1.7.10), all of your items will be gone. This includes your inventory and anything in a chest, hopper, dropper, etc. They changed the way that entities are stored, in a way that is NOT backward compatible. To my knowledge, there is no way to rectify this situation either.
Sorry, I understood that as you had created the world in 1.7.10 ... and when 1.8 came out, your profile probably changed to 1.8 automatically.
If this all happened in 1.7.x, that would be really weird. The situation I described is the most common way that people lose all their items. Could be some other sort of file corruption, but not sure how that would happen though.
Alright so I have a witch hut that I've turned into the 3 layers for the start of a witch farm. I've lit up all caves and the surface level 128 blocks in all 4 directions and have the server and my render distance at 10+. During the day zero witches spawn ever and as soon as it turns to night they pop up like wildfire. I've seen videos and streams of this same farm working great during the day. Anyone have an idea as to what could be happening here I'm very confus

Although on topic, idk why that happened to you if you didn't switch versions or install/uninstall mods.
I have had this happen. I was testing with a alpha world I converted to 1.7. Everything was going fine until I wanted to set up the world border. Up til then I was using MCedit and world edit. I loaded the world up in a 1.8 snapshot and setup the world border. For some reason after that I reloaded the map by mistake in 1.7 again. And that 5 seconds the world was loaded ALL the loot that was placed in the dungeons across the whole map vanished along with the chests they were in. And it was not just in the loaded chunks. ALL 225 dungeons in the entire map were affected.
But the strange thing was that MCedit could still see the chests and their contents.
You said you were testing mods. Loading the map in a different version of the game would only affect the modded items. However loading the game in a snapshot and then back 10 1.7.10 would do what your describing. This is because Item id numbers were replaced with names.
This is a very common glitch in Minecraft. I am afraid I don't know of any way to fix it. I would just go into creative mode and try to get back what you lost.
I made a survival world. Nice flat plains, forest biome right next to it, many animals around, a few caves.
So it was time to start making a house.
A few days later, (more like a week later) my life was complete.
I had full iron armor, diamond sword, food, many resources, and an amazing house fit for a king.
It took a few attempts on making a house but I finally had the house I wanted.
It had a kitchen, a bedroom, and an upstairs balcony to watch the nice view of the setting sun.
I have labeled everything in and out of the house so I didn't get lost.
It was amazing.
But then,
it happened.
I logged on to minecraft, on my way to my epic world of survival. Thinking
"what should I do today
venture a cave,
climb a mountain?" (I already parkoured my way up the tallest mountain I could find. And built a flag at the top)
When I got onto my world, on my front lawn I noticed something.
"Where is all my inventory?
Then I thought
"I must have left it in one of my chests"
When I walked to the house I realized all my armor was not on me.
When I went in it was horrifying.
I rushed over to my chest,
it was all gone.
I went to the kitchen,
all my food was gone.
Then I noticed that all of the signs that I used to label everything did not have the words I wrote on it.
It just said,
"null-null"
At that point I was very sad, angry, scared, frusterated. Knowing that all of my hard work was gone.
That was the day that I threw my brand new laptop out the window hitting my neighbors dog. (just kidding)
The reason that I am making this post is because if there is anyone who had this happen to them, your not alone.
Thats my story.
If someone has an explanation of what I just experienced then I would be very great.

Then you probably accidentally loaded the world in one of the 1.8 prereleases or snapshots. They'd have done the same thing.

Anyway... sounds like you loaded your world into a snapshot then went back to 1.7.x version. If you didn't do that, then I dunno.
