There is no option in this poll for composite materials. Its the best. Building strictly out of some one kind of block makes your house/castle/whatever look bland and boring. Make it cosy and tasteful, you can even use custom colored wool with patterns (design them yourself!) for wallpapers, tapestries or carpets.
I make them out of cobblestone, but if you need to make a griefer-proof house, you should do it like this:
Outside layer out of Wood/Cobble (preferably Cobble)
Next layer is made out of Obsidian (for explosion proof houses, if fire proof you can make the layers out of wood-stone-wood)
The Inside layer out of Wood/Cobble (Whatever you choose)
The Obsidian layer is the most expensive to make, but it serves good protection from TNT griefers AND is fire proof.
Even if they break the walls, they still have an Obsidian wall to break.
On the bottom of the tower/house, just put some lava and on top of the lava source put Obsidian so it wont burn your wooden floor. That way, no one will be able to grief your house, the only way would be the roof but if your house is quite small they wont stand a chance againts your defense system.
I use: Stone and cobblestone for my castles
Wood for my cabins and small houses
Dirt for Hobbit-holes
Caves because they're caves
I build underwater when I want to look outside and see squidies
I use shiny blocks for shiny buildings.
And who uses gravel for building? It falls on your head!
I actually do sometimes makes homes out of dirt, with wooden floors and wooden support beams in the ceiling, and a cobble roof. I also make these homes with very interesting floor plans, utilizing curved (Well, as curved as I can get with blocks.) walls and interesting shapes. One dirt house I made is like living in a giant snail shell.

wait what, making a gravel roof is annoying, and finding enough gravel tends to be a pain
I made my house primarily out of obsidian... It's fun putting tnt around it and watching it take the tnt like nothing :3.
