Dude, be honest. It's not easy to get through a forest with a horse. Walking would be faster. I know that it is more than occasionally that you have to cut down a tree. Plus, it's just f**king annoying.

For the record, I actually haven't had any trouble getting my horse through forests. I would give credit to TreeCapitator (which makes cutting a tree down take a few seconds no matter how big it is) but I rarely even have to cut down a tree.

One pick, one sword, and one bow with ammo of course (all highest tier of enchantment/ made from diamond). I don't wear armor typically (or I just wear iron pants and boots maybe) because the game would be too easy if I were to wear full diamond armor. That's it

Here is what I bring with me when I go out exploring or looking for caves.
Either a silk touch diamond pick, or a working pick like Efficiency 4 Unbreaking 3.
Diamond sword
Iron shovel & axe if I do not have diamond versions at that point.
1 Bucket of Water
1 Stack of steaks, or other quality food.
1 stack of wood planks
1 stack of either cobble or dirt for pillaring, etc.
1 stack of torches.
Bow
Flint & Steel (only if I plan on going into the nether)
Maybe half a stack of coal, but I usually run into plenty along the way, long before I run out of torches.
And generally that's all I'll take with me. If I need to make a crafting bench or furnace, then I already have the materials to do so. If I am looking on setting up a new settlement, I'll make a bed along the way if I find sheep. This leaves me with 3/4 of inventory for looting things or gathering ores, and I have everything I need to make sure I survive.
Also, if I am carrying a silk touch pick, I like to bring an ender chest with me in my inventory. This will allow me a lot more space, since I can always put the chest down, stuff some things inside then silk touch it back into my inventory.
