This is probably the most I had, and I will probably get more. But currently, I have a stack and 48 diamonds, all found while mining with my Fortune 3 pick.
I recall having 89 as my highest amount of diamonds at once. And I didn't have fortune on my pick.

Well, you can see my post here (in a thread on the same topic; you know, redundancy); I've actually added more to that since then as I've been playing on that world again, although I'm no longer using Fortune because it is unnecessary with my playstyle and allows me to cave much longer before running out of space (I mine all ores I find, even coal; without Fortune I get about 1/3 as much coal after what I use for torches/smelting). That also doesn't include hundreds of diamonds used to repair stuff (I had used around 200 alone to repair an Efficiency V, Fortune III, Unbreaking III pickaxe, though now I just use Efficiency V, Unbreaking III, which can also be fully repaired with a new pickaxe for fewer levels and 3/4 the diamonds, not that repairing was a problem, I can now get 60 levels between repairs). I even have three stacks of emerald blocks on that world, all from mining (though I've since taken to mining it with a Silk Touch pickaxe to keep the ore itself).
On my survival journal world, I have mined 57 diamonds, currently I have 16 diamonds because of tools and I have recently made Diamond armor, the world was started yesterday and I don't have a fortune pickaxe.
Most I had was somewhere near 4 and a half stacks of diamond blocks. Unfortunately that was back when I had invested all my time in servers, little had I known at the time that all server maps are reset at some point. So none of it was saved.
