That has never worked for me. The tilled dirt tiles just revert back after a time without getting watered.

Technically, you don't need water, but farmland that is not watered frequently reverts back to dirt, and crops that are not watered grow very slowly, and are very unlikely to make it to full size before their farmland disappears.
so basically, when you till the land and you see the dirt blocks turn dark brown, that means they are "saturated" and crops grow faster on saturated blocks. you can achieve these blocks very quickly if they are near water, but if they are not then crops will still grow, just much slower

No, actually. That doesn't work. It needs to be horizontally adjacent, not vertically.
