I see a lot of potential in hoppers, but one of the things that annoyed me a little was that they couldn't move liquids.
I thought that if you placed a water-source on top of a hopper it could flow through and to a different location.

As said; one does not simply become to old for pokemon, or minecraft.
I really don't see a need. You can't push Hoppers or Water and once you use this once to move Water from above the Hopper to the output you can't do it again because the Water is stuck at the output. So... where is the use?
What would be neat is if there was a Water Source over a Hopper and you threw a Bucket into the Hopper it would fill before being moved to another Hopper or a Chest or whatever. The same for Glass Bottles for Brewing, that way you could have an automated Bucket/Bottle Filler.

I disagree. Though in some ways it wouldn't actually be useful, it would add a nice aesthetic.

I have discovered a truly remarkable proof of this, which this margin is too small to contain.

I understand your points and respect your opinion, but i thought that the liquid would be placed on the "output"- side of the hopper giving a place to get lava or water. And also your idea of filling buckets or bottles was pretty good.
Edit: it could give source blocks of the certain liquid.
Actually, there is a simple use. Create an infinite spring (2x2), Place a Hopper under one of the blocks, Hopper has infinite supply of water to move to someplace else. However, there is a very good reason why it doesn't work like this as well. A water stream is the easiest way to move items into a Hopper. Picking up the water would break this. So, I wouldn't mind some kind of fluid transport system in Vanilla, but I think it would have to be one or more new devices.

I get that much but I still need some other uses. As of right now the only thing I can see this being useful is if you made an infinite Water Spring over the Hopper input, and then it would dispense the water at the output (and the spring at the input would automatically replenish). But that would only work if there was an Air block there as the actual Water block is not supposed to be obtainable in game. So it would move the water once, then it would do nothing until you picked up the Water Block at the output. Then it would suck in the source block at the input, and replace the air again with water at the output. I suppose it could be used to make a neat looking sink I guess...
I'm still not seeing a real use here. Any situation where you would want to move a single Water block from A to B it would be faster and cheaper to make a Bucket and move it yourself. And if you had an infinite Water spring it would still be cheaper and faster to just make an infinite spring wherever the output would be.
I'm not outright opposed, but I have yet to think of or read an in game example where this would be useful.

to set up the timing, but yeah, that could work.
