Minecraft is incredibly diverse, with so many different ways to play: Minigames, PvP, Redstoning, and Building to name a few. And it is the latter two that my suggestion concerns.
Simply put, it's an upgrade to note blocks.
Recently I have taken an interest in note block songs, and even went as far as designing a few of my own. But I quickly discovered that the lack of instruments and octaves makes unique songs difficult. So here are the changes I would like to see added:
Tuning
Of course, you can still right click the block to increase the pitch by one note. But since that takes a while, my idea is that you can shift-right click to open a GUI with a keyboard display. By clicking a key, you close the GUI and the note block is tuned to that note. It is very simple, and supports a lot more ideas.
Two Octaves More
With the power to instantly tune a note block, you can now access more octaves without having to wait for the correct note to appear. How this will work is that normal tuning (holding right click) will only play the notes in the existing two octaves. However, shift-right clicking to open the GUI (mentioned above) will allow you to tune an octave higher or an octave lower than the current two octaves.
More Instruments
This is probably the more extravagant idea here. I am suggesting the following instruments to be added, and ideas for the block to be placed underneath the note block to attain that instrument:
Triangle - Glass (any type)
Flute* - Wool (any type)
Harp - Hay Bale
Violin* - Wood-based block (includes logs and planks)
Drum - Hardened (stained) Clay (any type)
Cymbals - Leaves (any type)
Instruments with a star (*) play only one note for 1/2 to 1 second (undecided).
(All instruments were chosen with care, ensuring that they are not simple replicas of the existing instruments in game)
These instruments would add much variety to note block music, and allow for unique tunes.
Plate = Sound
Currently, note blocks with a solid block above them cannot play their note. I am suggesting pressure plates to be an exception, so that it is much easier to set up musical doormats and the like.
There is an external program, named Note Block Studio, that allows you to do just that. It's quite good and I use it a lot when I wish to compose some songs in Minecraft.
It is also one of the main reasons why I wrote this thread: The lack of notes and octaves and instruments made it hard to write "unique" music as almost all pieces sounded the same.

I cannot tell you how many times I've tried to make a song with a note block but I can't because of how hard it is.
Actually, more like 2, but that's because I don't use them a lot.
