However, I have two slight issues with them. The first being the crafting recipe of the redstone torch. The other being the fact that there is no glowstone torch.
Now, I debated if torches (normal coal ones) should have string in there recipe, however I thought that would cause balancing and progress issues in the first part of the game. Unless there was a drastic overhaul into lighting sources, especially fire, string in the torch recipe wouldn't have been feasible, so until someone more creative than myself comes up with a better lighting system, that will have to wait. However, I do have a actual point and suggestion in this post. Redstone torches; the crafting recipe makes no sense! If redstone dust is a DUST, then how does it adhere to the torch? I present you with a simple fix: http://minecraftrecipedesigner.com/creations/80446.png All that would do is add a slime ball to the torch recepie, not many balancing issues, as redstone torches are only really useful in the latter part of the game. The other suggestion is glowstone torches, a functional and decorative item that would have the same recipe as the redstone torch (the new recipe) only with glowstone instead of redstone! The glowstone torch would have roughly the same texture as the redstone torch only yellow instead of red. And it would be 2-3 lighting units brighter then the normal torch.
That's the suggestion! Feedback and tweaks appreciated!

Now, you COULD leave the redstone torch alone, however I think adding it would just give minecraft a slight touch of detail, is it important? No, but it's a video game, and I think changing it would be nice.
I have a few problems with this. The first being the Redstone Torch recipe. I really don't want to have to find a Slime Chunk (which can take hours without a tool), then spend another hour or so mining it out, and turning it into even a crude Slime farm, just to make some simple Redstone devices. The alternative is finding a swamp biome which could be literally miles away, making a transport system, and heading there to camp out for a few in game weeks in order to get a decent amount of Slimeballs, especially if I am already using them for Sticky Pistons and Slime Blocks.
As for the Glowstone Torch, the highest light level there can be is 15, and Torches are at level 14. So a Glowstone Torch could only be one level higher, unless you want them to change the way lighting works entirely to allow for higher light levels.

Oh, I didn't know torches were such high levels I was thinking of the glowstone torch having some sort of environment perk (like: if torch is in "x" biome or area it does "y" thing, I don't have any ideas yet :/)

Consider how common redstone ore is and the drop rates compared to coal:
Redstone ore veins form at the bottom 16 layers of the map. Below layer 14, it can be found in 1.025% of stone. Redstone ore drops 4 to 5 redstone when mined with an iron pickaxe or better.
coal ore comprises about 1% of all stone, regardless of altitude.
So, if they are about equally as common when mining below y=14 (such as when mining for diamond) yet redstone drops 4-5 dust per ore than means it is as easy or even easier to make redstone torches; in other words, the crafting recipe is balanced out.
Also, requiring string (as you considered) for regular torches is an extremely bad idea; I can blow through 1,000 torches in a single play session, requiring 250 string at a 1:4 ratio, and you are certainly not going to be able to find that without a spider string farm and I think any game mechanic that forces you to make mob farms is completely unbalanced. Similarly, requiring slimeballs for redstone torches would be problematic for those you ue a lot of redstone. Besides, the game doesn't have to be realistic; try chopping down a 1 meter thick tree trunk with your bare hands.
And as noted already, glowstone torches would be hardly brighter than regular torches; an increase of one light level only extends the range by one block, unless they modified the lighting engine (limited by the data format used to store light levels, so they would also need to modify the save format).
I'm not seeing any appeal or solid reasoning in these changes. This is just coming off as you wanting to change some crafting recipes for the sake of doing so. Crafting recipes for torches not making sense doesn't really proof anything and that stuff doesn't matter at all. It would be a very stupid move to make torch recipes more expensive just so they're "more realistic".
And there's no reason behind a glowstone torch either, when it can make a bright light block that works fine underwater. Absolutely no support to all of that.
Maybe instead of a slimeball for the redstone torch it could be a piece of string, similar to what you suggested with the original torch recipe. I support because i also find it unnerving that dust can be placed on a stick to create a functional torch, it makes no sense to me.

Semi Support. I like the overall idea of making redstone torches crafted more realistically, but I don't like the idea of needing slime balls, since that would be too expensive. Glowstone torches would be neat, but I think they might feel too much like a mod.
Do you know how hard it is to find slimeballs if you're nowhere near a swamp? Restone torches are supposed to be fairly easy to get, as they are used a ton, so using slimeballs to craft them would be inefficient. People also seem to be forgetting that redstone actually glows, even as an ore. It makes sense to use a glowing stone to craft a torch.
