Try his seed. it's pretty damn flat for a while around, there's a spider spawner near the surface, and the caves are full of coal, iron and pretty high-up lava. Tons of trees around too.
if you really wanted to, you could create a bukkit server and add uCreate or creativebanana as a plugin. (creative banana is better for the flat world in my opinion)
