My brother has this thing in his room for coins, and you put the coin in and it rolls down and falls into different holes depending on its size, obviously you can't let the quarter slot come first though, or nothing would get past, so it goes from dime to penny to nickel to quarter. You just need to do the same thing in minecraft, make the small hole for chickens first, then the pig slot, then the cows slot, assuming you could get that to work.

First sort chickens:
Drop mobs over a pit with a water break. Chickens will hit the water and float on top. Make a stream to deliver the chickens somewhere.
Below the water break create another stream to push the remaining mobs toward a 1 wide 2 tall tunnel. In the tunnel leave one block open to a side, and enclose the rest. Make the bottom of the tunnel half blocks, and it will now be 1.5 tall. Sheep and cows will be stuck in the middle lane.
To one side have an exit for the water that flows over the top of the half-blocks and pushes across to the open side. So the water stream will push sheep/cows forward, but it will also push pigs/wolves to the open side. Along that side have a 1 block high opening at the head height of the sheep/cows and the pigs and wolves will be pushed into that open area.
Usually takes about 3-4 open blocks to reliably sort pigs/wolves out from the cows/sheep. After that deposit the cows and sheep where you want.
To separate pigs from wolves use water again to push the pigs and wolves forward and to one side across and opening that has a ladder against a block. 3-4 of these in a row will reliably separate the wolves from the pigs. Route each where you want from there.
