I want to make a fangame of minecraft, (like a Minecraft Racing Game, etc.) but I want to sell it, I'm not using any sprites, sounds or resources of the game(only the name of mobs).
I don't want to have any copyright problems by selling it, so I want to know first!. Thanks.
If you're really interested in being sure, you should consult an Intellectual Property attorney before proceeding. Firstly, putting Minecraft in the title of your game without their permission... probably infringes on their trademark name.

I would get in contact with Mojang and their lawyers, and then make a compromise such as they get 70% of the Profit, or they can make profit off the game too in someway. This way, you can use Mojang's Assets (Sounds, Names, Etc.) and then they still get profit off of it.

It doesn't matter how anyone answers you here... the "some guy on the internet told me it was OK" defense just doesn't seem to work very well if you are ever sued. Therefore, asking for legal advice on a forum is pretty much a waste of your time. Consult with an appropriate attorney IF you're really interested in being sure.
In general, copyrights and trademarks are an area where there is a lot of "gray" space and, as someone else posted above, the owners of such rights also have the right to make financial deals with those wanting to also use their assets. If someone down the road wanted to use something from your game, wouldn't you prefer it if they at least talked to YOU about it first?
