My and my friend Lleyts500 went on FunkyFactions once. We made a nether base with a portal to the overworld, and we came back from a mining trip and this Full Diamond (With Sword) Baby Zombie just started wrecking us. We both got killed like 15 times, and eventually killed it. It dropped nothing :/
And later that day we got raided. I had claimed my room in the base but not his, so his side got filled with lava and mine was unharmed 😂

No I don't think it's a glitch if the mobs entitydata says CanPickUpLoot:1 than any zombie, skeleton or pigman will switch their weapon for the most powerful in their inventory. yes mobs have inventories cough-noob-cough

Oh. Well I don't know how everything works in the game, but that doesn't necessarily make me a "noob". I only play the game to survive like most other average players.
But as for armor, the best I've only seen is gold as well.

If not, once a zombie looted my corpse's set of enchanted diamond armors and my diamond sword. So hard to kill. I was worried if he won't drop my armors back. I forgot what happened next... Whether I got them back or not....

The best possible armor a zombie can spawn with naturally is full gold or leather. There is absolutely no way a natural zombie will spawn with any kind of weapon or armor better than leather or gold. Most likely the server you were on had a plugin or the zombies you saw killed someone and took their items.
I've seen diamond on many occasions (let's just say that I kill a lot of mobs, up to 300+ zombies and 700+ total in one play session), and have even gotten a handful of armor from them:
(this was not from any of the zombies shown, including the following zombie, which was unenchanted, as I didn't take a screenshot of it)
(the purple tools seen in some of these are from a mod; mobs can also carry this and it is equivalent to diamond with more durability but it doesn't count here since it isn't vanilla)
I also see iron armor about once per play session and chain many times, so I find it hard to believe that some people have only seen gold (you can find the chances for each tier of armor here).
As far as I remember I once saw a skeleton with iron chestplate (enchanted) and chain boots (enchanted)..wasn't that hard to take out and sadly it didn't drop it's armor

The chances of it being of a particular material are:

Leather 37.06%
Gold 48.73%
Chain 12.90%
Iron 1.27%
Diamond 0.04%
Even better, here is code taken from 1.8; the type of armor is set by the variable var2, which has a 50% chance of being 0 (leather) or 1 (gold), then three successive chances of being incremented by one with a 0.095 (9.5%) chance each; hence the chance of diamond is 0.5 * 0.095 * 0.095 * 0.095 = 0.0004287 or 0.04287% - just what the Wiki claims. Note that difficulty (var3) only affects the chances of full armor, beyond regional difficulty, which maxes out at 15% on Normal and Hard (in 1.6.4 it can actually reach 22.5% on Hard since the normalized regional difficulty value can reach 1.5 on Hard, 1 otherwise. 1.8 also nerfed(!) Easy so that mobs can never spawn with armor, the regional difficulty calculation is also a bit different but this code was not altered):

With that many mobs, an average of 249 per play session, it is no surprise at all that I've seen as many diamond armored-mobs as I've seen (that is also just one world; there is good reason that people describe me as "insane"; e.g. "Killing hundreds of mobs so quickly is Serious Sam levels of insanity."
NB: if it is hard to believe that I encounter that many mobs, perhaps you are playing with a low render distance in 1.7.4 or later, which IMO is a game-breaking bug and was totally unwarranted (apparently, they decided to cover up lag by letting the internal server's loaded chunk distance go below 10; in 1.6.4 this is always 10, which limits "Far" render distance to that many chunks, but they could have just let it get higher but not lower. However, these versions are also much more resource demanding, particularly since 1.8, which is likely why they made that change).
Also, 1.6.4 has a higher mob cap, 79 hostile mobs compared to 70 in 1.8+ due to a change in the mob cap calculation (in 1.6.4 the value of 289 mentioned here is 256), as well as a higher "followRange" for zombies (hence this issue, which is far worse in 1.6.4, about the only area where 1.6.4 runs worse than 1.8; I use a fix taken from Forge to fix it).
Of course, I've also been accused of using hacks (mods, x-ray, etc. Note that some of those screenshots are NOT modded, the ones without the purple tools. Also, since I wrote that mod myself I know what it does, which is why I excluded mobs spawning with the mod's armor) to mine hundreds of thousands of ores - millions across all of my worlds (the only way I can probably prove myself is join a multiplayer server, which of course would have to be 1.6.4). My playstyle is basically one of superlatives (see for example, "Does anybody else come close to this level of caving?").
Here are my single-play session records, all on the same day - I wonder how many people have mined that many ores in ALL of their time playing:

What do you mean "so hard to kill" ? Just pillar up 2 blocks then whack away at the useless zombie. All it takes is a little patience.
On Topic: Best I seen is a full diamond plate zombie, with 2 enchanted pieces. Didn't drop anything the cheapskate !
