I think that at least 50% of new nises don't bode well with Minecraft's simplicity and originality. For example, breaking dirt. It sounds like stone at first.
The only new sound changes I like are pretty much is the endermen one. The others just sound unpleasent to my ears,Especially the sound effect when you hit a cow.
I personally don't mind them. I liked the old ones, but I don't particularly miss any of them except the old mob sounds. I'm still waiting for ambience, though.

Glorious sounds. Love em, they need a littlebit of tweaking, but what doesn't. They have learn from lasttime they changed sounds and they sounds are much more thought through and has HD quality now. Large amounts of cows are annoying, but I just stay away as much as I can. Bat's are bad though, I thought it was something wrong with my headphones for an hour. Anyway, as in real like "Nothing is constant but change" ... learn to live with it, if we managed to learn to like the creaking doors and chest you can learn to like these awesome sounds!
