I begin a nomadic survival world. It brings a breathe of fresh air to Minecraft. I never settle down, usually only stopping for the night. When I find a cool place, I build a small base there and move on a few days later
Although I never get bored, (I have in the past though) this is what I do:
I take a break. Really, people who are bored: this will cure it. Take a week long break, or two. You will want to play and play and play after that. I haven't playing Minecraft as I type this for..... eh, a week and a half. Now, I really want to play and cannot wait to do so! Trust me, it works and will make you love Minecraft even more, especially if you take a break for weeks at a time.
But again, I don't really get bored with things, because I know I will just get even more bored with another game.

Step One: After being bored of vanilla Minecraft, add mods.
Step Two: Once you get bored of mods, get a modpack like Feed the Beast
Step Three...well...I haven't actually gotten that far.

I'm currently on step 4 - loiter around Minecraftforum.net
I try to be creative, I go to a server, or I see how long I can survive in various places like level one is night level two is the nether (sorry for spelling) level three is the end. Also you could get a mod
When I get bored in Minecraft, I usually quit the game and play something like Portal or TF2. I also might make a new, hardcore world and make my main goal something stupid, like building a massive redstone circuit or a replica of a TF2 arena. I also might do a speedrun to see how fast I can find things like Diamond, Emerald, and a Stronghold. One time, I did a speedrun to see how many Cave Spider spawners I could find and conquer within 30 minutes. I actually found 3, and conquered 2, but in my defense, the third one only went poorly because I got shot off of the ledge into lava, since the spawner was in a ravine about 40 blocks above lava.
Use WorldEdit and make giant balls of TNT. Light them. Use Explosives+ to level jungles and villages.:tnt:
And experiment with SPC commands.

Or just make custom potions.
Or messing around with REDSTONE.
